I checked at my local Sam's Club yesterday, and they will sell me the frozen Rich's Bettercreme (that's all they have)...has anyone worked with that??? I have a cupcake/wedding cake order for next week and was hoping to use Bettercreme......

Yes- frozen Rich's Bettercreme is what you want! It comes as a liquid or prewhipped. You can use either, but you have more control over the frozen liquid.

I made this last week and I really like it. Melody is right, be careful with the flour. Sift it first then strain it again after cooking. I've used cooked BCs before and those tiny yellowish flour bits will ruin your icing.

Can the Bettercreme be made a head of time and stored in an air tight container?? Is the liquid the same as the pre-whipped that comes in a bag with a tip??

I bought the 15lb tub at Sam's and was wondering if I can thaw enough to put into several smaller containers and refreeze. Has anyone done this? It was the pre-whipped.

I had 2 layers of a WASC cake sitting in the freezer that was crying out "decorate me". After reading about Bettercreme, I went on a hunt and found some locally. I whipped up 2 cups of it, added raspberry syrup, Mmmmmmm.
I also bought a sleeve of raspberry filling from a cake supply store.
I torted the cake, added some filling to about 1 cup of whipped Bettercreme, and applied to each layer except the top. then added the raspberry filling on top of that, stacked the layers and iced the sides and top of cake. Put finishing touches on top and brought it too my daughters for desert...................OMG is all I can say. FANTASTIC. It was very good and I got raves about it. Tomorrow my D-I-L is starting the whole process over again, only with cupcakes. Can't wait for her to hear "OMG who made these?".
I also want to know about the 15 lb. tub that MsToynasCakes asked about.

Carleen, if you have a Sams they sell the big bucket (over in the bakery dept.)already whipped and you can put it in the freezer and just scoop out what you need and reseal it!
I have just bought a case of the liquid kind but haven't tried it yet. A note to others looking for the liquid: If you have a grocery wholesale (like loads the 18-wheelers) try them for the liquid. Thats where I found it but, I ask if they delivered it anywhere around me and they don't.
Anyway I cannot wait to try it with some of these yummy flavors!

Thanks so much Linda! I'm SO glad to know I can use it as needed and keep it frozen. I was afraid I was going to have to wait until I had a monstrosity of a cake to try it. I limit my cakes to 1/week. I work full-time, I'm co-leader of my daughter's Brownie troop and do children's church and nursery at church, so I can't handle more than 1 a week. Can you imagine how long it would take me to use 15lb of icing?! icon_surprised.gificon_wink.gif

Question regarding the frozen pre-whipped...how long does it take to defrost?? Is there a certain way I should defrost it? Do I use 'as is' or should I whip it more?? Sorry for all the questions but I'm using it for the first time to frost 360 cuppies for Saturday so trying to plan things out!!

Amy, it will thaw just about like Cool Whip or if you want to take it out of the freezer and just let it thaw in the fridge over-night. I don't usually have to whip it any more except when I do "cookies and cream" then I use the mixer to mix it real good. Thats a lot off cuppies! Good luck!

If you have a Dairy Queen close to you that makes cakes They usually decorate with bettercreme Maybe if you ask they will order some for you.

What is the normal range of price for bettercreme? My local cake supply store doesn't really carry it, but I was able to convince them to order some for me to try and they charges me $40.00 for a gallon carton. Is this the average price? That came up to $6.66 for two cups sinceI got six 2-cup servings from it.

I buy the liquid 32oz carton and I get it anywhere from $4.50 to $ 5.00 a carton its different for everyone .

That is a little bit pricey I think. I bought a case of 12 quarts for $49 but it was all I could find around where I live.

I thought that was a bit too steep considering it took four cups just for a 9x13. I'll have to check with out Dairy Queen.

For the person who asked if you can thaw it out and separate it into smaller servings then refreeze it for future use, yes you can. That is what I did with mine considering I got a whole gallon.

I paid $4.49 for a quart. The store did have a frozen 15 lb tub and they wanted $38.00 for it, but they made me an offer of $23.00 for the 15 lbs. Since I never used it, and I wasn't sure if I had to use all 15 lbs. at once. I had to turn it down.

I used the quart, and I loved it, It's very good. Everyone liked it. I definitly will purchase it again. I only bake for friends and family, and maybe only 1 or 2 times a week.

I think whipping cream is cheaper, and the taste and texure is very similar, but this holds up better. That may be why it's called "Bettercreme" pun intended.

Back when I ordered my wedding cake from a local market---and before I made cakes---- they got my order wrong and instead of using Buttercream, they used Bettercreme. I was not happy about it and they refunded half my money for their mistake. When we got to the reception and started eating the cake, it was so good! I have been in love with Bettercreme ever since!

Well, I finally tried the Bettercreme (bought 15lb pre-whipped from Sams for like $27.00....actually went thru TWO containers for 30 doz. cupcakes!!) and it was a big hit!!! My sister stopped by while I was frosting and tasted the Bettercreme...and tasted it...and tasted it!!! She said it tasted like ICE CREAM!!! I will definitely use it again (probably next week for my daughters bday cake!!). Thanks for spreading the word !!!

Don't know about the PB- haven't tried it but thought about it today. Made the "mock" bettercreme since I haven't located a source for the real deal yet with the "richer" addition of pudding and then added a whole boatload of mini reeses cups. Turned out yummy and plenty peanutbuttery!

My mock bettercreme came out nice. I was wondering if anyone has tried to make the thickener with corn starch. I added non dairy coffee creamer in the powder form to mine instead of dream whip.

Someone please tell me why you can't use fondant with frostin pride? I do it all the time. I crumb coat my cake and I have also used it with fondant accents.

Can someone please tell me exactly how to make a white chocolate cream cheese filling with strawberries? Do I add the cream cheese first @ room temp then whip in frostin pride???? I was thinking of making a almond pound cake with this filling.

I used just peanut butter with the bettercreme and then whipped it up. I had to whip it a little longer and it didn't get as thick but it was very tasty. I used it as a filling and it worked out fine.

My local cake supply store doesn't carry Bettercream, but they do carry Whip n' Ice. Have you ever tried it and how is it?

Oh yah, there are several other brands that make comparable products... you don't have to just get Bettercreme... that's just the one I can get MY hands on, ya know?

I haven't tried any other brands mentioned, except Pilgrim's Pride... but again, that's chicken. BWAHAHAHAHAHA. Sorry. icon_redface.gif

Gaby, I found my liquid Bettercreme at a wholesale grocery place. Its like they have "cash & carry" to the public but mostly load the 18 wheelers. If you have a Sams Club and it has a bakery you can buy the already whipped at the bakery dept. You might have to call & speak to the bakery dept. manager but they will sell it too you.
