I want to know how you do it all/????? I'm dreaming dreaming dreaming of being like you some day!!!
I'm in insane. I just don't waste time on things like rational thought. That slows down the whole process!
If you want to put a lot of filling in a cupcake without it exploding, just take and apple core andmake a hole in the center and fill it up with the
filling. Then take a piece ot the center you took out and plug the top..
Edna
I've used a paring knife and cut like a little cone shaped plug out and then filled and used the top of the plug to cover the hole. That worked pretty well but it definitely wasn't as full as yours are Mel!! I'm gonna try that. I just do imagine a whole cuppie explosion....like in a cartoon!!!
Thanks Edna I have heard of that but never tried it ! I dont seee the point of putting the cake circle back on top if your going to just add a swirl over it .
Besides you could use those for cake balls ! LOL! I have always been happy with my 3 hole plan but I might try some other ways just to compare !

Gee Edna, I hate to mention it in front of everyone like this, but you're really doing this incorrectly. You use the apple corer to make the hole, fill with filling, then suck the 'plug' out of the corer and munch happily while icing the cupcake!! ("Gee, I don't know why I've put on so much weight... I've totally stopped eating those cupcakes! I haven't eaten a whole cupcake in months!")
Mel I like your idea better and Fiddles I never thought of making the plug into cake balls. I always put mine back in there too.
So Melvira, You mean I can just add a box of lime jello pudding to my bettercreme and it will come out alright?
No because the lime flavor is gelatin. I am pretty sure they don't make lime pudding. But they DO make lemon, so yes, you could add that!! You will want to add a little regular milk though to keep it from getting too heavy and thick! And man-oh-man will you flip for it. It's gooood! It's an instant quick-n-easy mousse!
I can assist with this one I like to add my lime curd (or lemon, or orange curd as well), to the bettercream. The most intense flavor you have ever had.. I fold the curd into the whipped bettercream, and use it for a filling in cakes, and cupcakes. Mix it to suit your taste, but I find that a 1/3 curd and 2/3 bettercream is aboaut right for my taste.
Ok Laura Now that just sounds way past delicious !
Thanks for sharing that yummy idea !
Oh yah Laura... that's fantastic! Thank you!!
I made one this morning for a lady that orders from me like weekly... I made red velvet cupcakes, then did the 'Richer' version using 2 cups Bettercreme, 1/2 cup milk, and one small pkg cheesecake flavored pudding. Since everyone traditionally using cream cheese icing for red velvet cake, this was a wonderful way to incorporate that flavor. They were marvelous!!
Hey Mel....what's this roller method you are talking about? Have I mentioned I despise trying to get buttercream smooth??

Back on Page 3, Melvira mentioned buying Snow Cone Syrup.
I make my own snow cone syrup with KoolAid. Just combinie 1 envelope unsweetened KoolAid with 1 cup sugar and 1/2 cup cold water.
If KoolAid comes in a flavor you would want to use, I recommend this "recipe."

Omigosh, we did it that was when I was a kid!!! I haven't made it that way in SOOOO long! Thank you for telling us that, because Kool-Aid makes so many awesome flavors!
Can that roller method be used with parchment or waxed paper and the fondant roller as well? I'm glad the gal asked on page 7 or I would not have know as well...thx for the link.
Is Bettercream found in the dairy/fridge section at Sam's? I don't go to Sam's, however, I do have a Costco I go too. Have any of you found it there?
You have to ask for the butter cream at the bakery at Sam's costco's in my area does not sale the better cream
Molly
I still can't find bettercreme anywhere near me! Makes me wanna cry. I'm going to Wisconsin in November to see the in laws for Turkey day... Maybe I could find it there. Now just to get it home....7 hour drive.
Melody, have you tried a Sysco's? There's one in Springfield. Here's their map site. Are you anywhere near there?
http://www.sysco.com/map/map.asp
Grandma...I'm 3 hours from Springfield. I should call my friend Nate who lives in Edwardsville...which is like an hour from Springfield, and see if he could stop on his way up next time he comes to visit. He stays with us when he's home from school.
Thanks Mel!! My fave is the bettercreme with the Reese's syrup, to die for yummy!!!!!!!!!!! Your a sweetie to type all that!

Ok, you're not avoiding us, that's good!! And it was my pleasure to do it. So many people were asking for it, I just felt like I might as well help out a bunch of people at once.
I'm telling you folks... I am a Bettercreme convert. I love it so much simply because it's quick, it's easy, and amazingly versatile. I haven't tried any of the other products that are comparable, but I would if I could get them around here. Well, maybe not the Pilgrim's pride! Bwahahahaa! At least not on my cake!!! (You guys are so much fun... I just love hanging out here!!)
Wow! So many great tips and ideas here. Gotta sayI am also a bettercreme addict! So much versatility! And stability in the summer heat!
I really don't care much for the undoctored bettercreme- but punched up- YES!
Thanks!
I agree Zoom... you have to get rid of the chemical preservative taste. At least that's what I think causes it. I won't use it 'straight'. If someone wants it 'plain' I load it with vanilla and almond to mimic my regular BC.
