Wanted to share feedback from my "cupcake debut" at parent's night - Everyone LOVED the lemon cupcakes. I ended up using SMBC to frost them with, since it was really warm here, and I didn't want the cream cheese melting off of them. I posted a pic in my photos since I can't figure out how to post one directly into this message. (can anyone tell me how for future?)

When you are typing in your reply, scroll down and there is a button that says "Add an attachment". Click on that then it will give you two buttons, the first to select your image the second to add it to the post. HTH!!
Thanks everyone Michelle104 - I found some paper I really liked to put on my cupcake stand, and used the colors from that. I LOVE printed paper and fabrics, so they naturally make it into my cookie, and now cupcake designs! Meemawfish - This was my first stab at fondant. I originally bought some premade Wilton fondant - and I have to say, it tasted disgusting. I got some guidance from some other CC'ers, and ended up making MMF. Thanks for the info SweetDreams. I am going to try my hand at modeling a figure of a lady in a swimming pool for my sister's 50th birthday cake. I was planning on trying MMF or either Michelle Fosters. I will let ya'll know how it turns out.

Here I thought I was being so observant!! I was at the grocery store today and decided to buy an extra bag of marshmallows to have on hand for the next time I want to make MMF... and I noticed that the minis come in 2 sizes. 16 oz and 10.5 oz... So, disregard what I said before (quoted below). I think I'm just paranoid because of how ice cream packaging keeps getting smaller. Sorry!

I just finished my lemon cuppies and they are divine! Just a little lemon flavor (it definitely tasted natural, not artificial thanks to using the lemon juice) and the cream cheese frosting is fabulous!! I wish the icing was not as runny, but it still holds up. I filled them up halfway with the first dozen and they didn't rise well like everyone else mentioned. So I filled them up more in the next batch (got only 1/2 dozen) and they filled to the top of the liner. This is definitely a keeper after my disaster with the carrot cuppies .

I finally got to make the lemon cuppies this weekend!! They were delish!! The only thing was that they were dry, but I think I may have cooked them too long, but everyone loved the flavor and the icing!! I will be making these again with absolutley no changes to the recipe!!
I have a quick question... are we only doing cupcakes in the CCCC or are we interested in muffins? I have this new book... it's called 500 Cupcakes, and it has a whole section on muffins, both sweet and savory!
I bought that book a couple of weeks ago, too!! I love some of the twists on cupcakes/muffins!
I haven't had time for the lemon cuppies yet. Hopefully this weekend. Between going back to school and working 12 hours a day, the days just fly by.

I just made the lemon cuppies. Loved the icing it gets a 4.5. It would have gotten a 5 if it hadn't been so thin. I found the cake part to be dry also. Maybe some cake flour for part of the AP? I would only give them a 3.

I'm planning on baking too! I have eggs and milk in my fridge that will go to waste if the electricity goes out. Might as well put it to good use!!
