Serving Charts Old ~Vs~ New ???

I saw a thread for old year books and asked this question in there too but wanted to post it alone because I thought it was a great topic to touch on.

I was Wondering if anyone else has seen the Servings Charts in the Year books compared to the Wilton School Decorating Cakes - Reference & idea book. ? ( this is the book that comes in the kits. dated 1999. I got my kit a year and a half ago.) icon_lol.gif

There is a good bit of a difference in servings from one to the other. icon_biggrin.gif

In the decorator book 14"x3" will serve 30
in the 1992 year book it would serve 45
& O WOW,, in 2005 it would Serve (party)63 and (wedding) 78 icon_eek.gif

?!?!?!?! Ok,, Which one would you go by??? icon_confused.gificon_eek.gif

Haha, funny you should ask! I asked Wilton the same question awhile back and their response was that the serving estimates on the site or in the latest yearbooks were the most accurate. They are constantly reviving information to try to be as accurate as possible.
I had the same problem when I noted that two of their wedding books had different estimates.

I was like Omg, this could be Confusing, Espically since I was grabbing the Referenc book all the time.

It is confusing! I caught myself up one day when estimating cake sizes for a newbie, I thought I was losing my mind, haha! Well likely, but not in that case, haha!
People here seem to prefer the charts on www.earlenescakes.com
I find them a bit more accurate too, the sizes required are larger for the most part, but she measured it all out to see what kind of serving sizes she would come up with.

I just bypassed all the charts and made my own by drawing cutting lines on the bottom of my cake pans to see how many servings in each size pan. My serving sizes are 1x2 for a 4-5 inch tall cake. When you actually cut a cake according to my own chart, it is a generous piece of cake because it is so tall. I let the customer how many servings she wants for the event after discussion. HTH
