Mel I do agree that the carrot cupcake recipe was very bland by itself. It took the icing to give it a boost !

I'll second that! The responses I've gotten from other people are that these are very good! I am just super duper fussy with regard to my personal tastes. When I think they are 'pretty good', the people I give them too are salivating on themselves and saying they are fantastic. I am such a food snob, it's a bit ridiculous. (So why on earth am I chubby?? Oh, that's right, because there is just as much really good food as crap! Ugh!!) icon_lol.gif

Ok so i made mine and let me just say that they were great...although I don't like any frostings with cream cheese tapedshut.gif ..so whenever I make a carrot cake just for me I use a vanilla icing in the can and I just add coconut, pecans, coconut extract and crushed pineapple to it (i hate raisins). So the cupcake itself was delish but i had to change the frosting...don't hate me, but I'm just not a big fan of cream cheese frostings. And for some reason I never get the amount of anything that the recipe yields...if it says Yields 24 I end up getting 22 icon_confused.gif

This isn't about the Carrot Cupcakes, but I figured that since this was a cuppy club I could ramble a little. I've been playing with a recipe for chocolate coconut cupcakes. It's my own recipe, I don't usually use ones from books, and I've got the texture down perfect and the flavor pretty close to where I want it. I've been using melted chocolate chips as well as coco powder to flavor it chocolate, but I can't seem to get the chocolate strong enough without overpowering the coconut. So, I'm thinking that if I made a yummy coconut filling for the cupcakes this may be a nice solution.
I'm wondering what the base of good cupcake fillings usually are. I could easily do a whipped cream with a little coconut milk, but then I couldn't leave the cupcakes out. In fact, anything i think of involves quite a bit of dairy. Suggestions?

I know it!! Don't get me started!! My husband was a bean pole when we met, after living with me for a few months he fattened up a little bit. Not crazy, but filled out, you know? We went to his mom's house one night for dinner and I was able to totally figure out why he had been so skinny!!

sayhellojana, one of my most popular flavors right now is a devil's food cupcake with a coconut filling. The filling is so easy, you beat 1 small pkg coconut cream pudding with 2 cups liquid bettercreme and about 1/2 to 1 cup milk. (To desired consistency) It is AMAZING!!! You can also give it a dash of coconut extract for added punch if needed. The ice it with the same filling, or just whip some bettercreme with some coconut extract and ice with that. SO GOOD!!!

This isn't a filling suggestion - but to heighten the flavor, adding coffee or espresso powder really helps!

OMG... you will love it. I am not sure where you will find it. Perhaps let us know what general area you are in and we'll see if anyone from around there knows. It is a liquid that you buy and then whip and it makes the most amazing filling for cuppies! And icing for cakes too of course. But I am addicted to it as a filling mixed with all different flavors. Man, I wish I could tell you all the things you can do with it. I steadfastly believe if you mix it with Hershey's malted chocolate syrup, you can actually enslave people. I know because I've done it! thumbs_up.gif

I'm in the Ballwin / Wildwood area - I haven't bought Bettercreme but I do know there's a SYSCO food service in St. Charles (636)940-9230 that carries Rich's Bettercreme. I don't know if they sell to individuals or if you have to buy in bulk but it would be worth a phone call to find out!

You could try calling Kitchen Conservatory on Clayton Rd. not far from the Galleria (314) 862-2665 or Karen Anne's on Gravois Rd. (314) 842-0886 to see if they carry it - maybe if they don't, they can steer you in the right direction!

Mel, you should make a recipe file on different ways you flavor Bettercreme! I tried a new vanilla cc recipe last night and I want to fill them with all different flavors of bettercreme. I don't know if this recipe is going to do it for me either. Still on the hunt for my solid vanilla cc recipe that I can use all the time. Anyone have a favorite vanilla scratch recipe they want to share?

Yes, Bettercreme has to remain frozen until you are ready to use it. It is only good for a few days when it is thawed out, but can be stored for a year frozen.

Grandma, I am definitely going to make a list of Bettercreme ideas complete with some cake flavor combo suggestions!! There is just NO end to it!!

Yep, when I met my guy he has weighed 125l bs for 30 years and now he weighs 135 since he moved in with me icon_lol.gif Of course I wish I could weigh 135, but I haven't seen that in 13 years icon_redface.gif
