I use vanilla extract from the Dominican Republic and it is sooo gooodd!! However I'm running out and won't be able to get my hands on some for a while. I'm curious as to what you guys use. I heard Mexican vanilla is really good. Anybody have a favorite?

I order my vanilla from Penzeys. Just got to Penzeys.com and order. I order all my spices from there also. The vanilla is very very good. They have regular strength and double strength.

Nielsen-Massey's Madagascar Bourbon Pure Vanilla...Phenom!!!! My hubby usually buys if for me at William Sanoma but I am sure you can find it cheaper somewhere else.

I love the one from King Arthur. It is a Nielsen-Massey product. I order the Mexican Pure Vanilla Extract. I have treid some from my local walmart do not really care for the taste. I think it is too alcoholy.

Magic Line is my favorite for vanilla and butter flavors. I do have a hard time finding it, but it is worth the effort.

I too love Nielsen-Massey's Madagascar Bourbon Pure Vanilla.
If interested, this is something your husband may be interested in.
I've only seen it on William-Sanoma in an 8oz bottles for about $19.00.
(may come larger, not sure)

I'm a huge fan of Watkin's. It's so good I could drink it right from the bottle! *LOL*

I also love using Kahlua French Vanilla liquer. Not a true extract but it works wonderfully icon_wink.gif

Add another vote for that one. If you don't need a gallon, surfas sells the 32 oz bottle for only about $25. With shipping it still comes to less than $32 for 32 oz...i.e. less than a dollar an ounce. The supermarkets sell a 2oz bottle for $3.50 or more so...why not get the good stuff for LESS $$??

Get a bottle of vodka (I used absolute, but you can use anything) and add a few vanilla beans. Shake it once a day for a month.
SO TASTY! I also made one with rum that I am enjoying.

I know that The Baker's Catalog sell the Nielsen-Massey vanilla in all sizes.

For my white cake I use a Tahitian vanilla, when I am baking something I just use the vanilla from Sam's club. For my icings and things where the vanilla is not cooked I make my own vanilla. I just bought some NM Mexican vanilla and am working on trying it out.

I read almost every recipe out there before I made my own. Some say to let it sit in a dark place undisturbed for 2 weeks, some say 6 months. Others say to shake it daily. I don't think you can mess it up.
The longer it sits the stronger it will be. Just test it. The vodka will turn dark in the first few days. I think two weeks would be ok. Just use a little extra as it won't be as strong.

You can also remove the beans and scrape them for recipes and then put them back in the bottle. And, when you get low, just add more vodka to the bottle and keep using!

Homemade extract would be a great christmas gift too!

I use penzy's vanilla. They put a pod in the bottle that you can use when you nilla is all gone. They have single and double strength. mmmm www.penzys.com

Vanilla bean paste is seeds and extract with emlusifiers added. I've seen vanilla extract with seeds in it too. I love the flavor of actual vanilla beans. I am going to have to try making my own too.

When I have to run out and grab some quick, I use Simply Organic brand. It's good quality and actually cheaper than buying McCormick brand. I can get an 8oz bottle for $8.99. The 8oz bottle of McCormick is $10.99.

I like NM vanilla products, and I usually buy them when I can in quanitity.

Again, I read recipes with every size bottle and number of beans.
I bought a small bottle of vodka (maybe a pint) and just split open 3 beans, scraped some seeds into the bottle and threw the beans in there.

Other recipes say to make the vanilla in a bigger bottle and then when it is done put it in smaller bottles. The next time I make it I will buy a larger bottle of vodka and put 6-10 beans in it. Then, as needed, I will fill my small bottle. I will probably put a bean in the small bottle too.

So many recipes out there.. going from 8 beans per cup of vodka to much much less.. it boggles the mind. do you find that only using 3 beans give you a nice deep vanilla flavor? I like that you can leave the seeds in the extract.

I can't wait to give it a try.

It really does have a deep flavor. It is a different flavor and scent than what you get at the store. At first I didn't like it because I am used to the super sweet smell of my store bought stuff. The homemade extract has an earthy aroma, just like the beans. I love it!

I also buy and make my own. When I buy, I buy NM from Surfasonline.com. Right now they are waiting on a Order for the 32 oz. so it can take awhile to come in. They have the cheapest price EVER!!!

I'm still a simple little ole' home baker who is still fine with the Watkins brand. icon_biggrin.gif

Plus, when the grocery outlet down the street has the BIG bottles for $1.00 a bottle because some dunderhead stockboy at the chain store dumped a case and one bottle broke on the rest of them and ruined the packaging...how can you not buy them all up???

I used a small bottle of Sam's Club vanilla and poured that into a fifth vodka bottle. I then filled it with vodka and added a couple of vanilla beans. Everytime I use a vanilla bean for my vanilla pound cake I put the scraped pod in the bottle. I let is set for about 3 months. Now when I use the vanilla I just add more vodka and everytime I scrap a bean I just add it in. It's amazing.
