I am making a cake for a party next week. It is for a friend who is debuting (sp?) her new jewelry line called "The Treasured Nest". I would LOVE to make a spun sugar nest for the top of the cake. When I was reading about how to do it, it said that if it comes in contact with any type of humidity, the sugar will melt. I live in Texas, so that means it can't come in contact with the air in general...right? icon_confused.gif Can I make the nest out of something else that is a little more stable than spun sugar?
I would like a pretty, elegant birds nest and I would appreciate any help or suggestions...
Thanks!

I recently wrote to "Ask the Pastry Chef" to ask a similar question. They stated it was best to spin sugar using Isomalt (which you can buy at pasterychef.com. Here is a great tutorial on how to do it.
