Cupcake Liners Falling Off

Has anyone had this happen? I baked 6.5 dozen mini chocolate cupcakes today. When I took them out of the oven they were perfect, but within 10 minutes of being out of the oven they shrunk down to half the height and had all pulled completely away from the cupcake papers! I also made vanilla, and a few of them did it then too. Also with the vanilla, I made 2 batches, both were mixed the same amount of time, baked in the same oven at the same temp, etc. One turned out brown and lovely the other super pale and a lot peeling away from the papers as well. I took them out of the pans while they were slightly warm and there were condensation droplets on the bottom of the cupcake pans. I'm stumped as to why this is happening! I thought with the chocolate maybe they were over cooked or not filled enough but then when it happened with the others...I bake in a commercial, convection oven at 300, same as always if that helps. I've had a few of a batch loosen but never an entire batch of 6.5 dozen!

Just happened to think, the AC (floor vent) was on in the afternoon when I baked them and it blows right near my speed rack. Think they cooled down too quickly? As I said they were lovely and high and perfect when I took them out...

I also have this problem and mostly with my minis. I think it's got something to do with condensation, but I can't figure out the solution....

What's your recipe? I find this happens if I have pudding in the recipe. Well, actually, I chose to eliminate milk/creamer AND the pudding from my recipe SO I cannot be certain which one caused the problem I was having. Let us know if you figure it out.........
