Melissa, what's going on in here...? We're gone for a few hours and Edna and BlueDevil get freaky icon_razz.gif

Well, I'm baking tonight...gotta bake and freeze for a cake that's due on Saturday. The client wants this cake to look like a cake her daughter saw in Cinderella's Fairytale Wedding...it's going to have pink, purple and white roses with pink draping. I also purchased a "glass" slipper to adorn the top...lookout for pics soon thumbs_up.gif

Talk later...off to bake now....

I need some advice from my peeps!!!

I have a cake due tomorrow that I'll be working on tonight. The client wants a strawberry filling. She doesn't mind chunks of fruit as the filling, but I'm not really clear what I want to do. I've done a strawberry buttercream filling in the past, but I don't know if that's the direction I want to take. I was thinking of using the strawberry glaze they sell at grocery stores to make strawberry shortcakes (do you know what I'm talking about?)...I would mix it up with chunks of fresh strawberries and using that as the filling...does that sound good? Anyway, I would love some ideas. Thanks!!!!

I have just the thing. My MOST POPULAR filling is strawberry cheesecake. I buy the Jello pudding cups in the strawberry cheesecake flavor. If you want to add strawberries to that OH MY that would be delicious.

My advice is to steer clear of that glaze...it is a goopy, NASTY sweet mess. icon_surprised.gif

Personally, I like the CC recipe for "Fresh Strawberry Filling", which has fresh berries and a cherry brandy syrup which is fantastic. My two cents...

I dont like that glaze either..I think i prefer bettercream with strawberries.
I just worked on one single 3 tier cake for nine hours icon_surprised.gificon_eek.gificon_cry.gif ...
I never spend this much time on one cake. This one grrr...Beatuiful though!..I need to post it.. icon_rolleyes.gif

I know you asked Edna this.... but I buy 27lbs of Buttercream icing from Sam's Club. I cost $27 and people love it. They always comment on how good it is and that its not too sweet. I also love how smooth it gets.

I am glad the cheesecake pudding was a hit. My customers love it.

Some people can get it others dont.. I haven been there lately so I am not sure. I buy mine here in D & G in Herdnon St. Close to Fashion Square.

I thought I posted this reply/topic on this forum, but instead it came out as a whole new topic out to everyone...I kinda wanted to get your thoughts and feedback from this group. See below:

Ok, here goes, I need some advice - FAST!

Here goes the story, hope I don't bore you or ramble to death icon_confused.gif

My wife works with a lady that has a nephew that's a minister. She told her nephew about us and our desire to make wedding cakes. He told her he wanted to meet us and possibly offer us an opportunity to work with him. Now, here goes the clincher, he used to do weddings here and there, but his business has picked up so much lately that he's decided to bring on a wedding planner to his group. This new wedding planner wants to develop a list of contacts/vendors to suggest to the clientele and they would like to meet us to discuss the possibility of having us on their list as a cake vendor. icon_eek.gif

My worries are:

Health Department
IRS
Licenses
Equipment
Man-power
Limited Space
Overall experience
Etc...etc..etc... tapedshut.gif

I need some advice from my cake friends icon_cry.gif

Everyone I talk to is telling me what an amazing opportunity this is...that I should take the risk...that doors like this don't open all the time...that these things happen for a reason and if I want to be successful, I need to start somewhere/somehow.

Guys, I want this so bad...I could taste it! I'm trying to convince myself that we can do it, but I don't want to get way over my head. If I decide to proceed, I don't think I would want them to consider us as their sole baker. I would want to take on projects for smaller/less profile weddings. I just don't think I'm ready to bake for a 200+ guest wedding icon_surprised.gif

What do you all suggest? Do you think we should move forward with this and do it under the table until we get enough profit/experience to have a seperate space just for cakes? Thoughts? Ideas? Suggestions? Advice?

Pedro..Is this working from tha house? Cause I understand in FL you can't. You need to rent a space. All I can say..Is crazy, I dont want the business for my own, thats why I work for someone.
The work is hard, you need to make deliveries and satisty your clientele. But if thats your passion then thas a plus.
Wedding cakes are all about details. Make sure you clean your swirls and delicate hand piping.
Make sure you charge well, or is just not worth it.

Hey ya'll!!! Where is everybody??? I miss you all. I haven't made any cakes recently....and haven't really missed it to be honest. I decided to take a sabbatical. At one point, I was stressed making cakes every freakin' week...and as you know, I already have a full-time job, a wife and 2 lil' girls at home, so it was getting out of hand. I'm good now. Thank God the holidays are behind us. I may start making cakes again, but will be very selective....just family and close friends. On a more depressing note, I got word that our company will start laying people off by the end of this month. They want/need to let go of approx 1000 employees. Keep me in your prayers please!!!

I am so glad to hear from you. I am sorry to hear that you may be in danger of losing your job. you and your family are definatly in my prayers. I have been busy with cakes and work.
