Ok, I have three recipes that I am dying to try. But they all require mascarpone cheese. I have looked at Wal-Mart, Albertson's, Super One Foods, Brookshires, and Kroger. No one carries this stuff. Does anyone in the northeast Texas/ Northwest Louisiana area know where I can get some of this stuff? When I ask for help, the clerks at the stores don't even know what I'm talking about!
I am not in that area, but my local Kroger and Publix carry it. Maybe if you ask the store manager, they can get some for you. I believe they do that at Publix.

Misdawn: check your local (or regional) business directory for an Italian foods shop. most major cities in the U.S. will have international grocery stores. if you can't find anything, seek out the biggest deli (even within the local grocery store) and talk to the person who orders the deli meats and cheeses -- cheese is cheese and if they can order cream cheese or ricotta, then they should be able to get you some marscapone. good luck!
If you have a Whole Food Store in your area they carry it. Also try Central Market if they are in your area. Believe it or not, I have found it on rare occassions at Wal-Mart but not all Wal-Mart carry it.

My kroger carries it, but it is with the high end cheeses, by the deli, not with the rest of the dairy products
They have given you some wonderful ideas. I would either try to find it or do not make it. Marscapone simply can not be replaced by ricotta. (:
I have also called some of the nicer grocery stores when looking for something. The managers can do special orders for you.
