Just started a new job and wanted to impress my co workers with some delicious cupcakes, what recipes do you suggest that will impress icon_smile.gif Of course they will be beautifully decorated as well but I need the taste to be as good as the cupcakes look.

I make a "better than sex" cupcake that is really popular. Just bake your favorite chocolate cupcakes. While the cupcakes are baking I add a can of sweetened condensed milk and a around a half of a cup of caramel (I use the Hershey's ice cream topping in the squirt bottle) to a pot. Bring it to a boil and cook for a couple of minutes. When the cupcakes are done baking, immediately poke holes and then brush on the caramel syrup. This will make a mess so I set the cupcake w/ old liner into a new one. When cool I ice with Rich's Bettercreme, drizzle a little caramel topping, and sprinkle with toffee bits.

ooooo - sounds good maryjsgirl!

I like lemon cc's with raspberry jam filling and lemon cream cheese frosting and I love vanilla cc's with strawberry jam filling and peanut butter buttercream frosting OR chocolate cc's with cheese cake dropped in before cooking (black bottom cc's) OR chocolate cake with kahula buttercream garnished with shaved chocolate.....I could go on and on and on. All these recipes are in the recipe doc maryjsgirl posted.

All of those above sound awesome. I've been doing a lot of vanilla cupcakes and filling them with varrious flavors of pudding. Lemon pudding has been the favorite among my co-workers.

I use a cookie/ice cream scoop. I'm not sure what the actual name of it is. But it is the scoop where you squeeze the handle and it pushes the batter out.

I love it.

I just use an icing bag and I've used a bunch of different tips to fill it. Just put it in the cupcake and squeeze until full. I don't explain things very well, sorry =)

LOL I am such an idiot...My mind thought it said "how do you fill a cupcake pan?"

To fill cupcakes I just put the filling in a pastry bag and push it into the top of the cupcake. I usually use Wilton tip #12.

If you buy the Cupcake decorating kit by Wilton it has a very long tip for filling.

kaytec - in the MOST AWESOME thread "How about a thread to seriously discuss making cupcakes???????" several of the incredibly nice ladies began putting together all of the recipies discussed by the super talented and generous people on the thread and since Valli_War and I have been keeping it up. This is exactly how I felt when I saw the list of recipes, thats why I started this post because there were just to many to choose from from that list.

Thanks everyone for your replies, the suggestions sound delicious.....I want to try making cupcakes with a filling.
