i made one...it's in my photos. it was a "cavalry" hat.
i did gumpaste for the brim, molded off of my cowboy hat, and then propped up to the shape i needed. after two days of drying and airbrushing multiple times to get it the color i needed, it was laying on the countertop. my husband opened up the cabinet right above it, a plastic cup fell out,a nd wouldn't you know it...it fell right on the turned up brim part. broke a big chunk out, but i was able to hide it with the "neckerchief" i draped in the back...shewwww!!
it wasn't really hard to do this, just takes a couple of days to dry. i would highly recommend gumpaste, though, over fondant, since fondant is affected by the humidity in the air, and might soften back up on you, or never even get hard at all.
