Have you Dipped?

I want to "dip" my cupcakes in chocolate. I'd like to frost the cupcake like normal and then dip it in chocolate---like the chocolate dipped cones at McDonald's--Has any one ever done this? And if so, what type of chocoalte would I use?

There is information on this in that giant-sized cupcake thread. The technique is called high hat cupcakes.

Those are typically the high hat cupcakes with the marshmallow icing then dipped in chocolate. If you go into the cupcake thread you dont need to sift through all of that, althoguh there was a great discussion on these cupcakes. Fiddlesticks has the link to all the recipes we have shared as her signature.

Are you talking about the "seriously making cupcakes" thread that is now something like 400 pages long? Or is it a different thread?

make sure your iced cupcake is chilled well (take one out at a time) and dip it into room temp but still liquid ganache. place back in the fridge.

in a nutshell those were the instructions given me. i'll see if i can find the pm and post it.

You bet! It was really easy.. just make some dark chocolate mousse but whip up the cream and eggwhites a little too much to make it a bit more dense. Then, while that is setting up in the fridge, bake your favorite chocolate cupcakes (the Double Chocolate Layer Cake on epicurious.com have been mine lately). Then when they are cooled.. take your chocolate mousse and put it in a piping bage with large round tip on it and plunge it into your cupcake and fill it until it just starts to crack on the top. Keeping the tipon the cupcake then begin to pipe a big blob of it on the top of the cupcake. If you keep the tip inside the mousse.. it will just make the blob get bigger and it will stay more round than if you swirl it. Once you have filled the cupcakes let them set up in the fridge. While they are setting up make your ganache (I do 8oz semi-sweet chocolate and 1 cup of cream). You want your ganache cooled but still liqquidy for dipping. Then take your CC's out of the fridge and dip the mound of mousse into the ganache. They really are good.. chocolate heaven.. PMS's worst emeny..

You know what would be really cool, first baking the cupcakes in ice cream cones (the flat bottom ones) and doing a hi-hat decoration on top of it. Cool! icon_biggrin.gif

any technique about dipping them? i tried dipping them but i was so afraid the top will fall off so i just drizzled the chocolate on some, not as pretty icon_sad.gif

the frosting should be really cold and firm, and the chocolate liquidy enough-(i think ganache would be better than just melted chocolate. it will still "harden" as it cools. the dipping should be done and turned right side up very quickly (speaking purely out of the tips i've heard, still havent done it yet.)

I did this for my daughters birthday this year. What a PIA! She loved them though. There's a pic in my photos.
