This is my first time making fondant. I used the recipe on here by nefgaby. I made it this morning and put it in the fridge wrapped tightly in a greased plastic wrap. Now 7 hours later it is rock hard.

Is it because it is in the fridge and when I take it out and it warms up it will be okay? I live in South Texas and it is really hot right now and not very humid. I don't know if that makes a difference.

I need it by tomorrow 7/28 night and so I have time to either make a new batch with advice on how to not repeat my error or go buy wilton fondant (yuck). Please help. icon_sad.gif

I never refrigerate my mmf. I would take it out and stick it in the microwave to soften it up. I often do this even when mine is in a bag on the countertop because it makes it easier to knead.

I live in TX too, (DFW area) and I never refrigerate my MMF. I wrap it in plastic wrap and then put it in a ziplock bag. I just store it on the counter or pantry. I have never had any problem with it going bad. Let it come to room temperature and I bet it will be OK.
