I've been trying to find out how much bread dough you can mix in a 12 quart Hobart. I have a chance to purchase one but don't know if I should wait and get a 20 quart. I make a homemade roll that I serve sandwiches on at lunch, about 50 3.5 ounce rolls plus a couple dozen small rolls that I throw in with my salads. I'd like to be able to mix my dough in one batch. It's about 24 cups of flour or so.

I don't have a 12 Qt, but I do have a 6 Pro and it handles 14 c of flour so I would guess that you should be able to use up to 28 c in a 12 Qt. Of course, that's just me guessing!
