I am looking for a few good mousse fillings that hold up and don't let the cake shift around. I suppose the standards:
Chocolate
White Choclate
and one suitable to fruit.
Does anyone have a good recipe or source to go to (book. site, etc)
Any advice. Never tried one before.

My friend sent me this link. I've made the strawberry mousse from here, which is delicious. I believe she has made some of the others, but I haven't tried them yet.

I haven't tried some of the filling recipes, but The Cake Bible by Rose Levy Beranbaum is exactly what the title says. I use it every time I bake a cake and make icing. It is the best cake book I have seen. I know there are recipes in it for mousse and pastry cream flavored fillings.
Love the cake bible. Have not tried the mousee fillings. I would probably try white choc inst pudding mixed with some dream whip or cool whip. It would be light, but not as airy as a true mousse.
The one that I like, especially if I'm in a hurry, is one box of pudding with 1 1/2 c. cream Whip on high for 1-2 minutes. It makes a nice thick filling.
The owner of our local cake store passed this one to me:
1 4-serving package of instant pudding
3/4 cup of milk
1 8 oz. container Cool Whip
Buttercream frosting
Stir together the pudding and milk and refrigerate overnight
Next day, stir together the pudding mix and Cool Whip, then add buttercream frosting to reach desired consistency.
I haven't tried the white chocolate version yet but everyone loved the chocolate version I made.

It sounds wonderful, but I would think the addition of buttercream would make it too heavy to be a mousse.
My baby is finally asleep. I will leave to go attempt to decorate a cake. Wish me luck.
FYI, when I made the chocolate I was going from memory and forgot to add the buttercream, so it was just the pudding mix and Cool Whip; that version may be a bit lighter than with the buttercream.
