Impressive muffins/cupcakes

I am starting my first paying job (raising children does not pay except in hugs) since college. My first day we are having a get to know you breakfast and I need something memorable! Any ideas for a wonderful muffin receipe that I could treat like a cupcake and put those adorable cupcake liners around them would be greatly appreciated. It's so hard being the new kid at school.

My favorite muffins are banana and I make them in cc liners so I can take with me on the go.

1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired


1. Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.

2. Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.

3. Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Congratulations on the job! In this economy, it's a real statement to your skills to be hired at a time when so many are being laid off.

Back to your question....

I know I've never found any muffin to be 'memorable,' so I vote for some great cupcakes for your first day. [Somewhere I read that the difference between a muffin and a cupcake is that if you throw a muffin against the wall, it goes "Thud." If you throw a cupcake against the wall, it goes "Poof."]

What about filling the cupcakes as a surprise? Don't tell them until they've bitten into them first. That's the thing that just sends cupcakes over the top.

How about:

Moist spice or pumpkin cupcakes with a fluffy cream cheese filling--Sort of like a pumpkin roll in cuppie form--and frosting

Chocolate cupcakes with a fluffy mocha filling [Hey, it's morning; Coffee is appropriate.] and fudgy frosting with a chocolate-covered espresso bean on top

Boston Creamed Pie cupcakes (see recipe somewhere here--sorry I don't have the link to the cupcake recipes)

Fiddlestics--When my summer comes to a close, I have some really terrific muffin recipes that I would love to share with you. I had a few published in magazines and they were really good. They were not necessarily my recipes but favorites of mine. There is nothing better than a muffin and a cup of coffee in the morning.

Since I take in cakes, etc. to work all the time, once in awhile someone else brings in something...well, the other day was no exception! A Manager brought in a muffin for my approval. Isn't that cute? Anyway, here it is, picture included. I've made it three times in the last week! They are delicious, easy and even if the directions and ingredients, sound, don't sound good, you have to try them! Amazing!! It's foolproof!! Oh, and jobs are great, but you can't beat those hugs!!

Pumpkin Muffins

1 box of spice cake mix (can use white)
1 (16oz.) can of pumpkin
1 bag of Hershey's cinnamon chips

Mix box mix (dry, don't make like a cake) and pumpkin.
Mix by hand.
Add cinnamon chips. Mix by hand.
Drop 3/4 full into muffin tins or muffin cups. These do not really rise so whatever you put in the cups is what they will be.
Bake for 22 minutes and makes approx. 24 muffins.


Oh, by the way, you'd never guess these are Weight Watchers and only 2 points per muffin. Really, try them!!!

No eggs, no liquid except for the pumpkin!! seriously, it doesn't seem like it would work, but it's fantastic!!!!

If it were me though, I'd add a bit of chopped walnuts or pecans! But that would alter those that are working on WW. My boys ate the whole batch, thus the reason why I've made them 3 times in the last 2 days!!

I do the same thing and bake in a 9x13 pan. It's amazing how tasty it is. Gives good fiber and veg, too. (My hubby lost 112 pounds by eating 'altered' recipes like this.)

Yes. His doctor had him hold for 3 months at 100 pounds down, to have his body get used to weighing that. He's started losing again recently. All he does is keep an eye on portion sizes now.
It's like I have my old husband back!

Thanks Vicky! I will give it a try ! I love lower fat and calorie items ! why not if you like the taste !
lilybird. I would love to have any recipes you would like to share with me ! I can pm you my email if that will also make it easier for you when your free! Muffins are one of my favorites for breakfast / desserts/snacks ! Just good for every reason!
