Cakey Coconut Macaroon Recipe Wanted

This forum is my last hope! I'm looking for a very specific sort of coconut macaroon recipe. Have any of you had the huge macaroons that they sell at the Disneyland Bakery on Main Street in Disneyland? They are perfect in texture and taste and that's what I'm looing for. They are more cake like in texture and they are piped into an almost perfect star like pyrimad. The cocounut seems finely shredded (maybe I need to put my coconut in the food processor?) The cocounut macaroon recipes I have tried (at least a dozen recipes) have all been to wet, or spikey, or chewy or they seep around the edges....not what I'm looking for. I want that nice tender cake like consistency. Also, how do you pipe it out of a bag? I have the large pastry bags and what I thought were very large star tips and the coconut dough/batter always gets clogged in the tip?

I know this forum is usually for decorated cookies (which I also make) but I am desparate to find this kind of recipe. Help!
