Need help with finding a strawberry banana filling recipe

My friend is asking me to make her a graduation cake for 90 people. It is my first big cake. She asked for white cake with strawberry banana filling. But, I can't find a recipe anywhere. Does anyone have a good recipe? I was thinking of winging it if I didn't find a recipe, but I am nervous since this cake is for so many people. I've never worked with fresh fruit fillings before...I would think I'd need to cook the strawberries to soften them, even if I add them to a custard for the filling. My guess is maybe I can just add the bananas as is, but I am not sure. Please help! Thanks. icon_biggrin.gif

An easy way to do this is mash some bananas (you can use cut ones too) and add to a jar of strawberry preserves. Of course this cake will have to be refrigerated because of preserve and bananas. If it becomes runny, add some of banana creme pudding to it. You might not need the whole pack of it. This is just my idea. I'll be curious about the replies too since this is one of my favorite fillings.

I would just use a banana pudding dream whip base or whipping cream, then boil down the strawberries like you said thicken with sugar. Or you could buy it premade in the sleeves , the banana cream and strawberries are good that way. I'm thinking seperate though. Good luck.

When my brother asks for this filling in his birthday cakes, he means a vanilla custard with sliced bananas and strawberries. Bananas and strawberries are both uncooked. For the strawberries, after I wash them I dry them very well (even let them sit a while to dry more). Then I slice them when I am almost ready to use them and let them sit on paper towels until I am ready. And the bananas I slice as I am filling the cake.

That was the first thing that came to mind when I read your post. I don't have my favorite custard recipe handy, but it's a basic (cooked) vanilla custard and I have used different ones. You can find some recipes on here I'm sure, and baking/cookbooks if you have them; but you can also check the web sites for Recipe Zaar, Epicurious, and the Food Network.

The other's suggestions are very different and sound incredibly yummmmmy!!! But I think you should ask your friend to be sure. And if she doesn't know, well, you have some delicious ideas right here to suggest to her! icon_smile.gif
