Any way of making choc sponge with plain sponge mix

Hi,

I'd like to ask you ladies, is there a way of making chocolate sponge using a plain sponge mix? Is it true that one can substitute some of the flour for cocoa and get a choc sponge?

I have done that in other recipes, with no problems but haven't tried it in a sponge cake!

oh I see, in that case, what is the ratio in which you substitute the flour for the cocoa?

yes, it should work just fine. deduct 2 tablespoons of flour from your recipe, and use 2 tablespoons of cocoa -- sift it several times with the flour to blend before folding/adding into your other ingredients. it makes a nice, light brown cake with a wonderful flavour, especially if it's a butter sponge, but it also works for non-butter sponge cakes (cocoa doesn't contain enough fat to collapse the foam).

My standard sponge recipe is
6oz butter
6oz sugar
3 eggs
6 oz self raising flour

To turn it into chocolate cake, substitute 2oz flour for 2oz cocoa
