SugarShack I have had great luck with your method and I've asked for your DVD's for my birthday; but I was wondering-Couldn't you get a cape or something to fly to our rescue should we ever need it? I'm thinking along the lines of The Incredible Cake Woman or SuperBaker. LOL

Hey Sharon, I used your bubble tea straws and cake prep. methods (which I thought was crazy at first) for the first time with my Tiki cake, and from other stuff I learned from all 3 of your DVDs. I stacked and transported it driving for 45 minutes, and despite a few beads of sweat, lip biting, and a churning stomach, it was perfect!!!! Not one problem, did not move or slide one bit, it got there in one piece!!!!! Your DVDs are priceless!!!!! And it was so much better than wrestling with those wooden dowels. Thank you, Thank you Thank you Sharon!!!! You are awesome!!!!! More DVDs please!!!!

Okay, so what if I'm too poor to buy a Kitchen Aid mixer? All I have is a hand held mixer... is it possible to get a decent butter cream? I can get it reasonably smooth, but like baking a cake for company smooth, not baking a beautiful wedding cake and charging a lot of money smooth, you know?

Can you post a pic of a cake and maybe then we can help you - you may not be 'seeing' it as smooth when it really is. Does that make sense?

Sugarshack saved the day yet again!!!
I went home last night after your advice, took out the air bubbled BC out of the fridge and let it sit on the counter for about 2 hours. Put it back into my KA ,added 1/2 cup crisco, 1/2 cup PS and some warm water. I mixed it for about 3 minutes on the slow speed and then crancked it up for another 15 minutes. MY BC CAME OUT FANTASTIC!!!

Now all I have to do is watch your stacking video and figure out where to buy my bubble tea straws, and I'll be set.

What's wrong with your icing? Lumps? Air bubbles? What BC do you use? I've used a hand-held for my icing tons of times and it comes out perfectly smooth.

What I thought was crazy was the thicher buttercream used to fill in the space under the cake and formcore board to even the sides out, but it worked great, who knew? It's more work, but the results are well worth it! it my new standard. Thank you again!!!
Folks do yourself a favor and buy her 3 DVDs, it will change your ever loving cake decorating, fondant rolling, buttercream making lives!!!!
Now for a 3D Cake Sculpting, and chocolate clay molding DVD!
It turns out greasy, grainy and bubbly ALL at the same time. I'm pretty new to the whole "Faux fondant" thing, and I don't know if it's the recipes that I am trying or what. Perhaps I should just keep trying new recipes?
Tashablueyes, my Bc came out grainy once also. had to throw the entire 4 cup batch in the dump. i was sooooo upset.
turns out that the sugar i was using (Dominos) was moist. so in my new batch, i sifted the sugar and then it came out fine. i don't use dominoes anymore. I use the walmart or grocery store brand. Cheaper and better if you ask me.
I cream the liquids and the shortening first before i add the dry ingredients.

I made more and still got air bubbles. Plus my mixer was getting hot towards the end. I had it totally full, it was overflowing while it was mixing for the 9 mins. Maybe I'll try a smaller batch in my 4.5qt. KA. Also, I was wondering how many batches you think I need to frost 12", 10", 8",and 6" tiers that will be then covered in fondant. Since I am covering it I can still use the bubbly batch, right? I am going to get this if it kills me, cause i love your BC! TIA!

hey everyone i havent read thru all the replies but if i can help in any way please pm me. i learned sharons recipe but modified it to fit in my 6 quart mixer to get perfectly smooth bc everytime. its takes practice and it takes a tad bit tweaking to make it work in your mixer and in your area seriously, pm me!!!!!

Yeah, we must be doing the same weird thing. I have made recipes to where it is practically overflowing out of my mixer bowl and I still get air bubbles. I just don't get it.
I'm gonna have to ask dh if he can tape me doing it so I can send it to SugarShack - 'cause I just don't know what I'm doing wrong! Maybe over-mixing? Is there such a thing??
