What were your most popular designs at the bridal shows? How much did it cost? Did the brides seem to be concerned about prices?

I am doing the big bridal show this February and am going to use this opportunity to display the upperline. I want to test the waters and see if I can break into the high dollar end. So I will put out some cakes with hefty price tags showing to see what the response will be. I already have over 30 weddings booked with out the show. Soooo

there are brides with every budget. It seems like there are more lower budget brides than the upper budget brides....but if you already have 30 booked, I would certainly target the upper budget brides. when you enter the show, you are setting the stage for your prices and talent.
I on the other hand, went about it the opposite way...I didn't have any weddings booked, and no one knew about me, so I went to the lower end of the price range.
There were several other decorators at the show that were very high-end and they were very well known...so it worked for me going the opposite direction to break into the wedding business.

I can't wait to see the pictures of your display cakes!

mypastrychef,

I hope you don't mind me answering your PM here, but I noticed you also started this post on the same subject. My most popular cakes at the fairs were the newest 4 in my photos. I just uploaded the last three today. They range from my cheapest (the square with red roses) to the more expensive (the package one). My prices here start at about $2 a serving. (The package cake was $4.25 per serving.) I am among the most expensive in my area, but I prefer to do just a few fancy cakes rather than several fast and easy cakes. We have 3 major store chains in my area that compete for the lower end prices on wedding cakes, so I wasn't even going to go there. I figured I'd go into the area where there is almost no competition in my area, and that was for fancier cakes. There were several brides that were concerned about price. My thoughts are if they want cheap, they can go to one of the stores. I wont lower my price, in fact I will probably up it in 2008. Some people want low, some don't mind a little high, my target market is the customer that doesn't mind a little high. It just depends on what market you want and what kind of work you want to do.
