If they are going to touch the cake, they should be pesticide free.
otherwise, just don't use the poisonous ones, like hydrangeas.
you can put a bit of waxed paper under flowers that need to lay on the cake.

Thanks, I was thinking more along the lines of a cake board - which would be seen whereas waxed paper would be barely noticeable.

I put plastic wrap for my barrier, then you can tuck it under so it won't show easily. Don't poke bare stems into a cake, EVER!!
