200 cupcakes... when do you make them

Okay, I do NOT have an order for 200 cupcakes... but it could happen!

When do you start making them? How long would it take to make 200 wedding cupcakes?

I did 250 cupcakes in May for my DS band.

The cooking was quick, I had 4 tins and could cook 48 at a time. They cooked about 20 munites. I mixed up the next round of batter while they baked. Quickly empty and refilled as fast as I could.

I got home from work at 5 and was finished and had the kitchen cleaned by 9.

The next night was frosting night. Make sure to use are really big bag. That was the biggest pain, refilling the bag over and over and over again. Took me 2 hours to frost and box.

Honestly, the boxing was the worst. It took a lot of boxes and the boxes took up a lot of room.

200...the night before they're due.

5 hours tops to make and bake if putting 24 in the oven at a time.

Definitely something that would benefit from an assembly line setup...by the time the 4th round go into the oven, the first set should be able to be iced and continue on until the last are out...while the last 3 sets are cooling...apply any decorations beginning with the first set...by the time you've decorated the first three sets, the last three should be cool enough to ice. Depending on the decorations going on(if any), they can be boxed before icing.

Last Oct., I had an order for 1200 due on a Thurs..
We got back from OK Monday evening. I made icing on Tuesday. Baked, iced, decorated(a cc pick and confetti) and boxed them all up beginning 9a.m. Wednesday morning...finished up around 5a.m. the following morning. Granted, these were iced with the 1M tip in orange and red, 1/2 choc 1/2 vanilla...simple but I believe had I not set it up assembly line style, they would've gotten the best of me.

I just did 180 the weekend before last for my friend's wedding.

I made the icing Thursday night. I started baking Friday at noon and used the convection oven, baking 48 cupcakes at a time. While they were baking I was getting the next batch ready to go.

I bought some plastic clamshell containers from the grocery store, and I am so glad I did - otherwise transportation would be a nightmare. Once the cupcakes cooled, I put them right into the clamshell.

Then, I iced them and 'confettied' them right in the clamshell. I was done in probably 5 hours or so.
