Anyone have Pfeil and Holding Cake Pans Please Help!!

I have purchased a full set of 2" cake pans from Pfeil and Holding. These are beautiful pans, thick, shinny, heavy aluminumn pans. I used them first this week to make a wedding cake for saterday 8-13-05. I have had a terrible time with these pans. I have filled them correctly but I can not get them done. They are all spongy and soft in the middle and cannot surport weight. I tried the bake even strips from Wilton and that did not help. I did lower the temp by 25 degrees and this helped a little. I tried putting even less batter in the pan but then I was not getting 2" of cake. I am wondering if anyone else has these pans and has had simular problems. Help is needed. I finally got mad and cut the top off and put the cakes back in the oven!! icon_mad.gif

Have you tried using a flower nail in the center of your pan as a heating core? If not, try that .. grease the flower nail really well.. turn it upside down and place it in the middle of you pan .. it will help to cook the center of your cakes ..

that's a little trick I learned from here icon_wink.gif

wow, that is a really cool idea, I will for sure try this. Does this work even with larger pans sizes, say 12 or 14"???

Yes, the flower nails work very well - try it - I think you'll be pleased thumbs_up.gif
