I made truffles today for a wedding on Saturday. Can I freeze them or just refrigerate? Does anyone know anything about truffles? Thanks!

If you can refrigerate them in a sealed container (to protect from odors) that will be sufficient.

You can freeze them, again in a sealed container. When you thaw them, do not open the container and thaw them overnight in the fridge. the condensation will form on the outside of the container.

Be prepared to re-roll them in cocoa, just in case.
