For those who ask me all the times how do I ice my cakes, I just posted a video on how I do it.. I tried to explain step by step what I do..

Edna Terrific video. I have not seen that technique before. I am going to try that this weekend. By the way, What icing do you use???

Well.. I use different ones ...but I use the wilton one for my classes and it works fine. I do use high ratio shortening instead of crisco. As long as it's a crusting recipe in a medium consistency, it should work. You dont want the paper sticking to the icing!

I'm curious on the thickness of your crumbcoat. When I first watched your video I actually though the cake was frosted until you stated it was a crumb coat. I thought a crumb coat was thin layer of frosting over the cake but your crumbcoat looks more than that. So how thick is your crumbcoat? And what do you mean by don't play with the crumbcoat.

yeah you should do a thinner crumbcoat. I didnt do the crumbcoat on the cake..When that happens I make sure my second coat is lighter!

Edna.. Ice a cake in 15min ? Are you kidding me?? It takes me forever and It still looks like crap! I do the paper towel thing but somehow I always seemed to push icing from the top down on the side ! Or who knows what I do ??? I will be trying this for sure !

I do understand your question..If you see the side..you can see the lines of the cake..I thought the same thing too..But I am use to deal with this situation since I am not the person who does the torte and filling of the cakes..
