My best advice to you is to not expect miracles from your first batch. They puff up like a mallowmar, then shrink back down pretty flat. I thought I had done something wrong at first, because they didn't retain their shape.

They are very soft when done, so allow them to sit on the pan or parchment for 2 minutes before removing, otherwise they'll break apart.

When they have cooled for a few minutes, but are still warm, they are a total Yum with a glass of cold milk, so keep a glass handy.

I make cake mix cookies all the time because they stay so soft. The recipe that I got from the DH box said to put the cookie dough on the cookie sheet and flatten it with a drinking glass that's been dipped in sugar. If you follow that recipe, they'll be crispier cookies. I don't flatten mine . . . and I put parchment paper on my cookie sheet. They stay nice and soft. mmmmm . . . gotta make some.

Get ready for red hands, bowls, etc. I made a batch of red velvet cake mix cookies and added white chocolate chips. I really can't tell you how they tasted because my son and husband ate them before I got to sample them.

Wow! What an interesting thread. I have never heard of cake mix cookies but am glad I have now. I'm looking forward to trying these out.

Speaking of cake mix cookies.. I make these alllll the time and top them with cream cheese icing. I first use them as cake batter, and there is always a ton left over, so I just plop them on a cookie sheet and start baking icon_smile.gif This cake turns out pretty dense and it's one of my staples.

1 (15 ounce) can canned pumpkin puree
2 teaspoon ground cinnamon
2 teaspoon ground cloves
2easpoon ground nutmeg
1 (18.25 ounce) package yellow cake mix with out pudding in the mix (white will work too!)
1 package pumpkin spice pudding (If you don't have it in your area, I'm sure you can substitute any flavor and just add more spice)
1/3 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
1/4 cup milk (I usually eyeball this because it's essentailly only to help with the consistency of the cake)

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 2 8 inch pans. Whisk together the pumpkin puree, cinnamon, cloves and nutmeg. Set aside.
In a large bowl, mix together the cake mix, pudding and oil. Beat in the eggs, then fold in the pumpkin mixture. Stir in the vanilla. Add optional milk if thinning of batter is needed.
Bake for 30 min, or until a toothpick comes out clean.

---And for the cookies, I usually bake around 10 minutes. I believe my oven is a bit hot though. I also top them with cream cheese icing.

Btw, these are VERY cakey, and delicious!

I made mint cookies just to see if they would be good, and boy were they good. They were sooooooo soft and yummy icon_biggrin.gif These were my 1st cake mix cookies and I love them icon_biggrin.gif

I box chocolate cake mix
2 eggs
1/3 c veg oil
1 c chopped up Andes candies ( or mint chips)
Mint kisses (you can use reg kisses)
Mix the cake mix, eggs and oil. Fold in the candy. Bake at 350 F for 8-1- minutes. When the cookies come out of the oven put the kiss on it.

The first batch I made I wasn't thinking and I put the kiss on before I put them in the oven. It was still good. A nice puddle of minty melted chocolateness right in the middle.

I found a bag of Andes candies in the baking isle at the grocery store. I don't know if they have them everywhere, but it beat the heck out of having to unwrap and chop all those candies icon_lol.gif

I'm so excited to bake cookies. I plan on baking with my 9 year old this evening. I've been wanting to try cake mix cookies - tonights the night!!

I know. I'm on a diet too (I didn't even eat a full thanksgiving dinner icon_cry.gif ) so I could only have a nibble of the cookie. It was probably the hardest thing I've ever had to do icon_lol.gif

WOW! THX for the added recipes! So many ideas that sound to good! You dieters.. dont you know you wait till after the new yr to start doing that ? Way to hard to be on a diet now !!! But I give ya credit if you can !!! Im planning to start fresh after the Holidays are over and done ! I wish ya luck though!!

I know you're supposed to wait, but if I gain weight during the holidays it's just more I have to lose thumbsdown.gif . It's not that hard because I'm diabetic, so I can't have a lot of the good stuff anyway icon_cry.gif
