Cake Mix Cookies Questions

Are they supposed to be a soft cookie? I baked them for the first time, yesterday, using Triple Chocolate Fudge cake mix, which contains chocolate chips. They came out crispy on the edges and brownie-soft in the center. They were great, especially when warm, but the softness concerned me. I was expecting a crisper, milk-dunking cookie.

Did you ever crumble them up and use them as a crumb crust for an ice cream pie?

Do you think they turned out soft because of the flavor mix I used?
My great niece was here baking with me, so I used a recipe which she could easily memorize and use at home. Here it is -

1 box cake mix (approximately 18.5 ounces)
1/2 cup oil
2 eggs

Mix all ingredients together. Scoop out by spoonful and bake 10 minutes.

This recipe made about 2 dozen cookies, using a size 50 scoop.

if you're scooping them out with an ice cream scoop or something similar I'd imagine they'd stay soft...

I make them pretty frequently...always have a soft cake-like center...unless I burn them (which is a frequent occurrence...)

I have never made those cookies. But I know another recipe using cake mix.
you take 1 cake mix, 1 egg, 4 oz cool whip. mix together into balls toss in powdered sugar and bake @ 350 for 8 min.

I've made them, and it makes a pretty soft cookie. But not so soft that you can't put them on sticks.

I make these all the time for the reason that that do stay soft.
If you use Duncin Hines Dark Chocolate Fudge cake mix and add some chocolate chips they taste just like the Double Fudge cookies from the Cookie Company!

I don't DO crispy cookies (she said with total snobbery in her voice!) so I like these because they are soft. Soft cookies are almost a trademark with my cookies.

To me, you dunk a cookie because it's so dang hard that you have to soften it up before you can eat it (Oreo's ... I hate Oreo's and specifically just for this reason ... they are too dang hard to actually eat!). A "good" cookie stands on it's own and doesn't need "doctored up" with milk!

I love those DH cookies with powdered sugar! They are so pretty when you do the strawberry ones, so pretty on any shower table, bridal, baby etc! And they taste like heaven!! lol

I second that, I too am a soft cookie snob, (although I still like Oreos) when I make cookies at home I underbake then so they stay soft.
I just made some peanut butter cookies the other day and my sister was shocked that they were'nt hard and crumbly, she had never had a soft peanut butter cookie, I told her its the only way to have to them!

Maybe if you want a crisper cookie, you could use butter (not margarine) instead of oil? I know butter usually makes cookies spread more, so they'd be thinner and crispier? Just a thought.

Have any of you ever added pudding mix to your cookie recipes? I do it all the time and my cookies stay nice and soft. Depending on what flavor of pudding you use, you get a great flavor too.
My favorite is adding french vanilla pudding to my sugar cookies. Yum!
(also a big fan of the soft-cookie club)

Strawberry DH - Hey, I didn't even think of that one!

Make some strawberry cookie dough, add some ground almonds and extract - ooh, baby, baby!

I make cake cookies ALL the time! My kids LOVE them. We call them Crinkle Cookies and they are super soft! We do all flavors but love the lemon ones for the summer!! Here is my recipe
1 box cake mix
2 eggs
1softened stick of butter
1T water
Mix together, scoop out with melon ball scooper, roll in powdered sugar, bake 350 fo about 10-12 min. YUM!!!!

We also love strawberry but tend to make chocolate the most!

My husband got me a recipe book for Christmas that is filled with all kinds of Cake mix Cookies and bars. I have tried several and they are all delicious! I am a soft cookie snob too!!

These are one of my trade-mark cookies, lol....chocolate cake mix makes a darn good cookie!! Try the lemon for a little zing too. The spice mix cake in the fall or near Christmas also works. The good things is you can add in anything; peanut butter chips, chocolate chips, mints, red hots - they all work and people taste them and think you are a genius.

My friend who can't bake to save her life called me on a Friday afternoon askin me to make cookies for her to bring to a bbq the next day. Well I was pissy that she asked me at such a short notice (and I'm sure I was just pissy in general too.....it happens icon_smile.gif ) anyway, I throw together the mint chocolate chips ones and I'll be damned if they didn't take first prize!

I had no idea they were having a baking contest (it was a military bbq or something - her Hub is a US Marine) so she split the $50 prize with me and I was a happy camper!

okay so I made these today - all i had was a banana supreme cake mix but WOW they were so yummy. i have to try all the other flavors now

Me, too! Love soft cookies . . .

Here's the recipe I've used several times--it's really good w/ a lemon or strawberry cake mix. Just be aware the dough is sticky if you don't chill it a little before working w/ it:

Easy Mix Lemon Crinkles
From: Pillsbury Family Fun Cookbook

1 package Pillsbury Plus Lemon Cake Mix
4 oz container (1 3/4 cups) frozen whipped topping, thawed
3 Tablespoons oil
1 egg, slightly beaten
Sugar or colored sugar

In large bowl, combine cake mix, whipped topping, oil and egg; mix thoroughly. Cover; chill dough 1 hour for easier handling.

Heat oven to 350 degrees. Lightly grease cookie sheets. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart on prepared cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until light golden brown around edges. Allow cookies to cool 1 minute before removing from cookie sheets. Cool completely. Store cookies in tightly covered container. 3 1/2 dozen cookies.

Note: May use other flavors of cake mix, such as strawberry.

Just something a little different to try--although the chocolate ones sound yummy, too!

I just realized that the chocolate cookies taste just like the cookie outside of an ice cream sandwich.

Time for a road trip to the freezer section, for some ice cream!

Time to elaborate -

What's your favorite cake mix cookie combination.

Let's say, you wanted to do an add-in, like chips, extract, etc. Or if you made them into sandwich cookies - what filling do you use?

I'll start - I bought some caramel chips at the store a few days ago, so I am thinking German Chocolate cookies -

basic cake mix cookies, using German chocolate cake mix
1/4 to 1/2 cup caramel chips
1/4 to 1/2 cup coconut - maybe toasted
1/4 to 1/2 cup pecans or almond slivers

What do you think of this combination?

Here is another soft cookie snob icon_lol.gif

I've been making these with my dd forever. Total favorite of the family especially when I make them into ice cream sandwiches....

1 pkg Devils food cake mix
¾ cup Crunchy peanut butter
2 Eggs
2 Tbsp milk
1 cup Chopped Reeses pieces chips or candy

Combine cake mix, peanut butter, eggs & milk in lrg mixing bowl. Beat on low speed until well blended. Stir in reeses pieces. Make small balls & flatten with hand put on greased cookie sheet & bake in preheated oven (350) for 7-9 mins. Cool on cookie sheet for 2 mins. Put on cooling rack & cool completely.

1 pkg Yellow cake mix
½ cup Smooth or Crunchy peanut butter
½ cup soft Butter
2 Eggs
1 cup Chopped or whole chips (milk chocolate, butterscotch , toffee)

Combine cake mix, peanut butter, butter & eggs in lrg mixing bowl. Beat on low speed until well blended. Stir in desired chips. Make small balls & flatten with hand put on greased cookie sheet & bake in preheated oven (350) for 7-9 mins. Cool on cookie sheet for 2 mins. Put on cooling rack & cool completely.

i've made these and even rolled them out and made shapes with the cookie cutter...they spread a little...but they were good!

i LOVE putting toffee chips in cookies...yum!

I'm thinking banana cake cookies with chocolate chips...yumm! If you want to talk snob, I read an article about a cookie baker who said, "And I NEVER would bake a cookie that started with a cake mix!" Apparently, unless you slave away all afternoon on your cookies, they don't count.
