Cucpakes Are Separating From Wrappers... Help!!!

The cupcakes I've baked recently have been separating from the wrappers. They aren't all doing it. There is particular flavor that is worse than others but they all do it. Could it have anything to do with humidity?? What I can I do to prevent this or fix it??

I have no idea why but why not just take the wrappers off? I think that's nicer anyway.

That's really bizarre. Are you using a different kind of wrapper than you have in the past? I've never had this problem. icon_confused.gif That would be frustrating if that wasn't the look you were going for. I usually like to leave the wrappers on if I'm taking them to an event. Makes them easier to hand out or for kids to carry around, but they do look better unwrapped.

this happened to me on my last cupcake order, I used the unbleached wrappers so I thought that was why, I can't think of another reason.

I took them out of the wrappers b/c they were crumby and just placed them in a clean one. It didn't look as good as would have liked but it looked better that a greasy liner hanging from teh cupcake.

If you figure out the reason let me know.

What are you storing them in or are they out on the counter?

I'm asking because I recently made mini-cupcakes - both white and chocolate cake - and I stored them in those disposable lasagna type trays that you crimp the edges over the clear tops and they separated. I think they kept in too much moisture so humidity may be to blame. I usually keep cupcakes in the clear clamshell containers (in the fridge overnight) with no problems.

this has only happened to me once - it was when I wrapped them & put into freezer before they were cooled all the way.

I never allow my cupcakes to cool in the pan. As soon as they come out of the oven I get them on a rack. I think it's the condensation from the steam coming off the hot cupcakes being trapped in the pan that causes the papers to release like that.

I never have a problem with papers releasing, and I freeze most of my cupcakes after they've cooled on the rack.

For those of you who freeze their cupcakes, how do you do it? I've frozen whole cakes before, but never cupcakes. Also, when you take them out of the freezer and defrost them, do the liners still look nice?

it usually happens to me if i use cheap liners or if i have overbaked. the cakes shrink up and cause them to separate. underbake them by a minute or so and then remove them from the pans after a few minutes. they shouldnt shrink as much.

i place them in a cupcake container and cover them (un frosted) in seran wrap, then place the lid tightly on top. i usually dont freeze them for longer than a few days to a week though. i think longer than this and they'd take on a strange freezer taste.

I freeze mine with NO problems - they are soft and moist when defrosted. I take them out of the pan to cool completely and then place onto a cookie/jelly roll sheet pan then wrap the pan in plastic wrap and put into the freezer.

I am with melysa on this one........ cheap liners. Since I changed to Williams-Sonoma and Sur La Table..... no more problems. I am sure there are other good liners, I just happen to try these and they worked great....

This happened to me the last time I made cupcakes.. only a few of them started to peel.
It felt real moist..so I'm thinking it was when they were cooling.. I take my cupcakes out of the tins and place them on cooling racks right away...Don't know why this happened to only a few of them. I made 3 dozen at the time.

I went to Williams-Sonoma looking for the cupcake papers you spoke about but couldn't find them icon_confused.gif

However, I did find a $99 (plus shipping) frozen cupcake that feeds 4 people icon_eek.gif

Sorry you didn't find the liners.. I know I had to go to their store to get them, they were not available on line.. Same with Sur la Table...

Some people use those like nut cup kinda wrappers that have the rolled edge. I've seen them online. Would be easier to wrap with ribbon too cause they are straight up & down and virtually cannot unpeel themselves.

Just a cuppy thought or maybe it's a nutjob thought.
