I may have made a boo boo when I said to the bride I could make whatever flavour she wanted.... She wants a Spice Cake for her three tier wedding cake. I have yet to come across a spice cake that wasn't in the shape of a bundt cake so I'm a little concerned... can Spice Cake be wedding cake???? If so... does anyone have a reliable recipe??
you can try experimenting with a doctored cake mix.
also, try www.recipezaar.com and do a sreach for Spice Cake...they have lots of great recipes.
I have done spice cake for weddings before. My brides really liked with with white chocolate cream cheese filling or apple filling.
All I do is take my white/yellow cake recipe and add cinnamon, nutmeg and cloves to it. Maybe 1 teaspoon on cinnamon, 1/2 teaspoon of nutmeg and 1/4 teaspoon of cloves. Go easy on the cloves! Learned that the hard way!

Southerners refer to this as "hummingbird cake" and it's not unusual for weddings. One layer of our wedding cake was hummingbird with cream cheese filling- waaaay back in 1995, and it was a huge hit.

I've done carrot cake AND spice cake..... I used cream cheese frosting and filling for both of them.....
I just did a doctored spice cake mix for my dd bday and it was great. I used a Betty Crocker spice cake mix and used the last box of pumpkin spice pudding I had left from the holidays. It was delicious!
I would think that a cinnamon buttercream would be good with a spice cake or carrot cake if someone didn't like cream cheese or didn't want to have to worry about refrigeration. Haven't tried it, but sounds good!! hth

I did one tier of a wedding cake in spice cake with cinnamon buttercream filling. BIG HIT! Not one piece of ANY of the cake left (and I made 50% more than what they needed!).

if you use this buttercream, should you omit the cinnamon from the cake batter or it doesn't really matter?
I'm just an amateur, but I'm planning one tier of an October wedding cake to be spice cake. I've been searching these boards, looking for ideas for the past few weeks, and this is what I'll be presenting as possibilities for a tasting:
DH Spice Cake Mix (WASC-style, with whole eggs, and spices substituted for the almond flavoring)
Fillings:
1. Caramel buttercream
2. Cheesecake mousse
3. Pumpkin spice mousse
The cake will have quite a bit of cinnamon, nutmeg, etc. in it, and I was thinking about have a smoother filling to 'support' those flavors. I got all these recipes from CC, so if you do a search, you should be able to find them.
My family loves spice cake with seedless raspberry filling. I use the Duncan Hines spice cake mix.

what types of filling can you use with a spice cake other than cream cheese filling?
I'm making one for tomorrow that has sleeved apple filling.
SInce I"m a mix baker, I make spice cakes for weddings pretty frequently.
And to avoid this problem in the future, what I tell my brides is, "If I can get it from my supplier or if I can make it, you can have it." THat gives you an out if you can't find a good recipe, as opposed to a blanket statement of "you can have ANYTHING you want!" I mean, you don't want to get stuck if a bride requests guava monkey-butt cake with pineapple-paprika filling or something!
The spice cake recipe I use is from the Cake Mix Doctor. It's supper easy, durable, moist, and delicious.
DH plain spice cake mix
1c buttermilk
1/3 c sweetened applesauce
1/3c veg. oil
3 lg. eggs
1/4 tsp cinnamon
I've paired it with apple pie filling (my favorite), van. bc, & cream cheese. It would also be great with orange cream cheese filling, which I use a lot with carrot cake.

I just had a thought - I bet an orange marmalade filling would work nicely with the spices.
I have made the spice cake with French Custard filling from the Whimsical Bakehouse book several times, and always to rave reviews. The filling is whip cream based though, so it is not ideal for sitting out for too long!

orange marmalade should also be a great accompaniment...i believe i've seen a recipe for a orange five-spice cake
I have a suggestion about the cinnamon in the icing though....
it tastes great, but it does change the color of the icing. So if you are going for white, that is not going to work. It actually leaves flecks of cinnamon, so really it would be best under fondant.

How long can you leave a wedding cake out with cream cheese frosting? Lets also say that I know the hall won't be the chilliest place either. Should I go with a buttercream on this project?
I did a fall leaves themed wedding cake for some friends of mine last year. It was a doctored spice cake mix (DH spice cake w/ the cake extender recipe found here on CC). I made a brown sugar caramel filling (also found here on CC I believe), and a caramel IMBC icing. The flavors were out of this world!
