I have a weeding this Saturday. I have the brides cake baked. And the groom's cake baked. The groom's cake is a 12" double layer tier with a 6" double layer tier on top. On top of the 12", there will be chocolate covered strawberries. I will be at the Mother of the grooms' house on Friday to decorate all cakes. The brides cake will be 14",10", and 6" on the floating tier cake stand. My question is on the groom cake. Like I said there will be chocolate covered strawberries. My question is if I cover the strawberries on Friday about 2:00 p.m. , Will I need to refrigerate them or will they be o.k. to sit in the box on the table for 20 hours??? I don't want the strawberries to go bad in 20 hours. It is about 90 degrees here in Ga. The house will be air conditioned. I know i have provided TOO much info, but i wanted to be explicit...

I do not refridgerate my chocolate covered strawberries because it leaves condensation. I would not do them on Friday - I would do them on Saturday before the wedding. They don't take that long to do or dry and if you do them the day before, they may get soggy on the bottom without refridgeration.

I was just about to ask this question... perfect timing!

I'd wait and do them that morning if possible! If you refrigerate them they'll have horrible condensation when you remove them from the fridge and make a big soggy mess. It's best to wait.

For Saturday weddings I wait as late Friday night as I can (usually the last thing I do before I go to bed, if I get to) I wash the strawberries and gently dry with a paper towel then I lay them out on the counter on paper towels for the rest of the night. First thing I do on Sat morn is dip strawberries. Like wendyintx said they don't take that long to dry.
