Questions About Cupcakes For Wedding

I am doing cupcakes for a wedding next Saturday, June 14th. I have baked some and froze them but I was wondering if I bake the majority Monday-Wednesday, do I need to freeze or refrigerate them or will they be okay left out?
I am also attaching ribbon to the bottom layer. It is polyester which I read was not the best but had already bought the ribbon. I read a lot of ideas about what to do so the buttercream doesn't bleed. I was thinking of ironing on the wax paper. Is that the best option??? What do you guys do?

Definitely freeze the cucakes. They will dry out if left out or if you put them in the fridge.
What kind of BC are you using? If you are using a crusting recipe, there is little chance that the BC will bleed. HTH!
I would freeze also. That would be too long for me to leave out.
I have used ribbon on crusting buttercream also and have had no problem.
i know it is to long to leave them out but.. evrerytime I freeze cc's they seperate from the papers when defrosted
I would freeze, thaw, apply simple syrup, then frost. Place into clamshell containers and slide into a zip-loc bag.
I never used ribbon an a cake before, but the wedding cake will have ribbon. I would also like to know how to apply ribbon to bc.

I just had a wedding last weekend and we did cupcake bouquets on each table. I also had a problem with the wrappers separating from the cupcakes after being frozen. Does anyone know why this is??
Forgive me, but I have a question about the simple syrup that you used on your cupcakes to "reattach" the liners to the cupcakes. I have a wedding coming up in 3 weeks and plan on freezing the cupcakes as I make them (no time to make 300 cupcakes the day before the wedding and get them decorated as well!!). Can anyone tell me what you used? And did you just brush it between the cupcake and liner to reattach? THanks!
I'd like to know that too, I'm so glad I read this, I have 350 c.c's to do for a wedding in 6 weeks and would never have thought about the seperation. How did you guys freeze yours, individually wrapped or what? Also how do you thaw yours?[/quote]
