Help With Snow White Buttercream

I made snow-white buttercream this morning. I waited until my girls were in bed to start making some flowers. Well I put the icing in the fridge and now it is really hard to mix.

Do I re-whip it? Or can I let it sit out on the counter for awhile??
Or do I need to add water or milk?

I think you can let it sit out for a bit and then re-whip, if memory serves. icon_smile.gif

Great! I was hoping. I was about to cry because I didn't want to make anymore. I made three batches of three different types of icing today!! I have a hand mixer and it was very close to dying.

You're welcome! Did it turn out ok? I know how you feel. I'm momofoneboy and you wait all day to do something for yourself and when it goes haywire, you do feel like sitting on the kitchen floor, crying and....maybe eating some chocolate.....that does seem to help anything, doesn't it-lol

It works best when it is at room temp. You'll never have luck with it cold.

dodibug: right now there is no chocolate in the house!!! I am about to die for some. I keep taking samples of the icing but that doesn't stop the craving for chocolate!!

niki- I got two colors at room temp. they worked great. Then i forgot I wanted the yellow and it was cold and like you said i didn't have any luck with it.

Am I reading the recipe correctly for snow white buttercream...it looks like it says 12 cups sugar. Is this correct? 1 1/4 cup shortening.

This ratio just seems really off. Or am I the one that is off? LOL!!!

Hey ya'll,
Yes it is much better to work with at room Temp.

* Leslie, yes, I Use the Snow white Buttercream for almost all of my cakes, and yuppers you got it 12 cups of p.sugar and 1 1/4 cups crisco. this icing is Certain Death to a Hand Mixer..

LOL!!! Sweet, I just pm'ed you this same question!!! I didn't know you had replied. But THANKS SO MUCH!!! I just thought that might be too much sugar. Good thing I have my trusty KA!!!

I am going to try this recipe next time. I wanted to wait on clarification first, so I just used my old formula today.
