I would find out all I could about the things he was most boastful of ...first car...medals...athletics...then make those the focal point of the cake.
if you run short of time, a sheet cake to look like a 100 dollar bill and instead of whoever that is in the middle(who is on one of those things???), put his image there.
Depending on personal feelings of course, you could use the theme of a family tree that starts with him in his birth year. You could mark it according to births and important events in his life and finish it with an open-ended present day 100th B-day marker.
On a personal note, if he is a military veteran, please tell him that I said, "Thank you".

I have a vision of a cake with an antique look. Small photo frames with edible image pictures of the past an present. Something to who he was and who he is. Good luck!
love the idea of a photo cake............depending on the servings you need you could make it a tiered cake with photos of him around the sides at different stages of his life...birth.......teen.......married......etc. and put a big 100 number topper on top! Congratulations to him!! That's quite a feat living that long.
WOW! 100, impressive. I love the idea of a time-line photo cake, starting, if you have one, a photo of him as a baby or small child and continuing through adulthood. Fantastic, no matter the theme.
I did one for my Grandad's birthday in Dec. A few years ago my daughter (now 11) asked why there were over the hill decorating items for 40, 50 60...
When I asked her how old "over the hill" was to her, she said not till you are 100. This was a big hit with my family, and so grandad finally got his "over the hill" cake this year. I just did a big hill, and stuck a sign with his name on it at the top of the hill along with the 100 numerical candles.
