I agree you guys should all join us ! Its a great thread ! Yes its long but worth reading to ! I also can forward the reg recipe files to anyone that would like all the recipes that we have gathered so far Cant remember but I think its up to page 178 ??? ( not for sure ) But we keep updating ! I am going to try a coconut cream cake with pineapple filling and chocolate icing. Not too crazy - but should be good for a luau birthday party. Maybe you could sub in any type of tropical fruity filling!

LOl fiddlesticks, it was at 178 BEFORE you went to Disney World, now it's at 223.

For the rest of you, we are really great about if you miss something, we can help you find it or fill it in. We have a couple of great girls that are keeping track of all the recipes for us, and sending us the file.

Oh wow, this topic is way too funny!! It's interesting to see what some people consider 'exotic' or 'yucky' flavor combos icon_lol.gif

I admit I'm one of those who LOVES experimenting with cake flavors to come up with new combinations. One of my favorite cake flavors is Ube AKA Purple Yam icon_razz.gif It's very sweet and rich, and when I've made it for people they love it, but I do .

I grew up thinking that cake was only chocolate. vanilla, or carrot. icon_biggrin.gif I was introduced to the idea of 'exotic' flavors thanks to my ex, who is from the Philipines. I quickly got used to his favorite desserts, which included avacados with condensed milk, green tea ice cream topped with red bean paste, and shaved ice topped with cream corn and flan. At first I was like WTF icon_confused.gif but it was actually good!

I also saw an episode of Good Eats where Alton Brown made an icing recipe using avacados instead of butter. I'm tempted to try it out, but what flavor cake would one put Avacado Buttercream on?! icon_confused.gificon_eek.gif

Nope, that's Taro root, which has a similar flavor. Haven't seen any taro cakes, but it's a very popular ice cream flavor. Ube is a kind of sweet potato. In fact, Wiki has a pic of what Ube cake looks like icon_biggrin.gif I LOVE the color of it!

I wish I could describe the flavor better. Its more of a delicate, fruity than rich or savory, but there's nothing that's common to the West that closely resembles the taste. It's usually served with whipped cream icing. Buttercreams don't hold up well in the humidity and heat, plus they'd easily overpower the flavor of the ube.

I've been trying to think out of the box lately. My most popular flavor is lemon cake with raspberry filling and lemon buttercream. But recently I did a tasting for someone who liked the lemon but also the 3 others I gave her and she ordered the lemon plus 2 from the tasting and added Chocolate Stout too. The tasting had: 1 -white cake with lavender cream filling and citrus cream cheese frosting. 2 - orange flower water with cardamon cake with tangelo curd filling and vanilla bc. 3- Champagne cake with peach cream filling and champagne buttercream,

She liked the lavender but thought other people whould be turned off by it and wanted to add chocoate hense, Chocolate stout cake with irish cream buttercream.

I want to try Chai sometime, anyone have a good recipe?

I got to go to the World Pastry Forum last year and sit in on five days of classes and the array of really way out their flavors in each class was equally scarry and to die for! I too have a quick gag reflex and I mean I can't even deal with the slimyness of cooked mushrooms. The stuff I ate! It was all beyond awesome too. Each pastry chef doing their best stuff. Mmmm

They prepared everything right in the class so the smells got you before the gag reflex set in y'know?

I didn't think I had any exotic stuff in my repetoire but I do have a killer hot fudge cake I make with cayenne pepper and saigon cinnamon. And some lavender pound cake.

Except if you try the hot fudge cake, you can double the cayenne and I actually use like two whopping tablespoons of the cinnamon. It's a family favorite.

And the deal with the lavender is that if you use too much it tastes soapy. So my usual 'if a little is good a lot is better' mantra doesn't apply to lavender or cayenne for that matter. Lavender makes great shortbread cookies too.

Allrecipes is awesome. They have a recipe for Ube-Macapuno cake!

Macapuno is coconut preserves, and SUPER yummy. You can find both Ube and Macapuno in most Asian and all Filipino markets. Or, you can substitute the fresh ube for powdered or paste, which can be ordered online.

(and to bring this back to being on topic) I think it's totally fine if one never goes beyond white or chocolate cake for flavors. Just because others try out different flavors doesnt mean it suddenly makes one dowdy or boring. After all, different parts of the world have different ideas of what a 'normal' cake should be so somewhere out there is a person who thinks vanilla is a wild, exotic flavor that only a wierdo would eat! icon_biggrin.gificon_biggrin.gificon_biggrin.gif
