I have been accepted at Alamance Community College for their fall semester in their Culinary Program!! I'm going for my Associate's Degree. I know there are pros and cons to school but for me, I think it will be great! I met two of the instructors yesterday. The lady who started the program and new chef they recently brought on board. The Baking & Pastry chef/instructor has several honors and they say he's excellent. If I'm lucky, most of my previous schooling will count and I'll mainly be going to school for my core culinary courses. I'm both scared and excited. I'm trying to get a job in the industry . . . Whole Foods, The Fresh Market, etc. on the baking side.
I wanted to share my good news with those that would care. I'm hoping to grow up and be like Indydebi with a catering/cake business!! My husband does photography so we can be a one-stop shop for brides!

I want to take the baking and pastry classes at Alamance Community College. Not going for the whole degree or anything but want to take those classes.

Good luck with school! I'm jealous! My husband is a food service director and does catering on the side. Our dream is to open our own restaurant/bakery/banquet hall type place. We'd both like to go to the CIA but I don't see that happening since all of our $ goes to our kids. Again, best of luck to you!

I graduated from culinary school in 04 and worked in evey type of business establishment before starting my own business.
Keep an open mind about everything you learn and fear no exam!!

Congrats! I just graduated from culinary arts school at Monroe County Community College this month (along with bigsisto3kids on CC). It's hard work but worth it. The time will fly by faster than you think. May I suggest joining the ACF (american culinary federation) chapter near you. Some chapters are better than others. The chapter I belong to is wonderful and very helpful, it's also great for networking and opening up opportunities otherwise that you wouldn't know about. Congrats again!
Thanks everyone! I'll definitely look into joining the ACF. I think there is information on it at school. My only concern is the money issue -- I've been doing pretty good as an admin assistant and DH is making noises about the cut in pay (at least initially) when I make the switch in careers. I do have a year's worth of culinary school and hopefully this will help when I interview. I need to somehow convince him that it will only be 2 years and although our youngest will also be in school (cost like Duke University), we'll be able to make it on what I make (wherever I end up) and it's a finite situation. Sorry to ramble but its been on my mind. Thinking about Whole Foods or that type of operation because I need the benefits as well as the flexibility for classes. I'm planning on working fulltime and going to school fulltime. I probably will not be carrying a full load most of the time because I think quite a bit of my prior education will transfer. DH is definitely behind me, he's just worried. I think my timing could be better but I've been working as a temp for six months and it just seems that now is the right time.
Again, sorry for the length of this. Not looking for answers just thoughts.

About ACF - Go for the Student membership, after you start school. It used to be less than half the price of the regular membership, and had almost all the benefits of a full member.
