On the list:

- a key lime pie for my Mom for Mother's Day (her absolute favorite - she's diabetic so I only make it 1-2 times a year), topped with white chocolate whipped cream

- since I'm breaking out the graham cracker crumbs, I'm also making a 7-inch cheesecake, lemon with a blackberry puree swirl through it, to freeze for when I go visit the SO next week

- some biscotti (I have to look through my cupboard to see what is open and needs using - maybe with dried cherries and pistacios or almonds) just to have around to munch on

Well, I made a cheesecake yesterday. Today I am using the leftover cheesecake filling to make cheesecake cupcakes and then I am making a Lady Baltimore white cake w/o filling for Nurse' Week for my MIL.

This is the beginning of my busy week of three huge cakes not including this small one!! icon_cry.gif

I have a Baby Shower cake & a birthday cake for today. For my DH, whose birthday is today but we'll be celebrating it with his mother tomorrow along with Mother's Day, I'm making him a 2 layer spice with apple filling cake. I also have gumpaste flowers to make for a bridal shower cake next weekend.

At least I don't have as many cakes as I usually do in a weekend and I don't have to go to the bakery as they don't have any special cakes this weekend!

I am making a 16" square with 9" pillow cake on top for a sweet 15 party at 6:30. As you can see I am taking a break and checking out cc for some positive vibes. This cake has been a disaster from the first layer completely sticking to me dropping a 1/2 dozen eggs. icon_cry.gif But I am excited to make my tassels with my new sugar craft gun so I guess its back to the kitchen!!! icon_wink.gif

I'm baking up some cream cheese squares for our mothers' day breakfast tomorrow. Its best to make them a day ahead so the cheese has time to set...yummy! The easiest recipe ever. Made with pillsbury cresent rolls. We're having my husbands parents and my mom over in the morning. So much for sleeping in. ;0)
Happy mothers day to all the moms on CC.

Okay, I'll be the oddball. Not baking any cakes unless I get a wild hair later today. My daughter invited me to the mother/daughter luncheon at her church today. Along with the invitation, she asked if I would bake my King Ranch Chicken casserole as they are serving Mexican food. So for my Mothers Day celebration, I have 2 huge restaurant size pans of casserole baking as we speak (they said to plan for 60 people).

Oh well, someone has to cook and I love to cook so didn't really mind. The men of the church are doing the rest.

Have no plans for tomorrow.

Well, Todya I have a birthday cake, 3 mothers day cakes a 1st communion and a boobie cake. Ohyeah 130 cupcakes too.
Funny thing is the 3 mothers day cakes are freebees from people that won gift certificates. I dont have to frost the 130 cupcakes the customer wanted to do that herself.
