...and icing???

That sounds crazy to me, but I was just wondering. I know you can make cakes with splenda and stuff, but I've never tried. SIL asked me to make a cake for MIL's b-day tomorrow, and she doesn't even eat cake! It seems so silly to me, so I was going to see if I could make her one she would actually eat!

I've made Wilton's Chocolate Fudge Groom's Cake with Splenda and it tasted pretty good. I also have a recipe for a chocolate chip pound cake that's delicious that I can dig up if you want it.

I have a really good (for sugar free icon_wink.gif ) recipe for a diabetic-friendly white cake and cream cheese icing. They're made with Splenda, which is actually made from sugar but the body breaks it down differently than regular sugar, so it's ok for people on low or no-sugar diets.

Let me know if you'd like the recipes, and I'll email them to you.

Hi Cakesoncall,

Can you send me a copy of your diabetic cakes cause I make cakes every week for senior citizens and there are some who can not eat cake that has regular sugar. I have the one from Splenda's web site, which is the cinnamon swirl coffee cake and it is wonderful. It is even better when having it with coffee, tea or just plain water. I actually have one for diabetic cake and 3 icings..It says 2 of them you can decorate with. I am trying them out tonight and tommorrow and will post if they are any good.

Has anyone ever made BC frosting using Splenda instead of 10X? My SIL asked me to do this for her b/c she had gastric bypass surgery and she can't have sugar. I told her that the consistency might not be just right for decorating. ??

I would also like the sugar-free recipes. I have been on a diet for a year and I've lost 90 pounds. Need to bake something that I can decorate AND eat every once in a while.

LittleBigMomma ~ just sent the recipes and congrats on your dramatic weight loss! That's about my goal right now (I have just over a year before I walk down the aisle and I refuse to look like the Staypuft Marshmallow Man in my gown! icon_wink.gif ) I'll have to look around; I may have a sugar-free icing recipe that is similar to buttercream, but I'm not sure. If you like cream cheese icing, though, the sugar free recipe I sent is great!

wifeshelper: Would you mind asking your wife if she has a diabetic recipe for German Chocolate Cake with the traditional icing, if it's possible to do for a diabetic. We have a friend who is diabetic and his wish is to have this cake for his birthday as it's his favorite.
