When making a sheet cake for someone, do you do 2 layers or a one layer, torted?

There was a discussion on this same issue the other day. It's really up to you, your customer and how many servings are needed. By torting and filling a sheet cake, you can extend the amount of servings a bit!

The question, I guess, is more to the limit of torting a single layer. My cake comes out to 1 1/2 inches. To tort or not in terms of appearamce

..yeah, that is a little low to try and torte. My sheet cakes are closer to 2" even after they are leveled!
