Sweating Chocolates???

Can anyone help... With the hotter weather arriving my chocolates seem to be sweating. Can I keep them in the fridge or will they develop condensation when I take them out?

Not only will they collect condensation, but they will bloom (get that white powder all over them) because of the extreme temperature change.

BTW - are you using real chocolate or candy melts? And are they already made into bonbons or are you speaking of chocolate which you have in stock for use later?

Help! I also need help with this question. I have to make 20 dozen tuxedo strawberries for my friend's wedding. I live in hot,humid Al. What is the best way to store these? Thank you in advance.

The ideal temperature for storing chocolate is 63-68 degrees F. Unfortunately, that is not quite the case for strawberries. Even with the skin on, the sugar in the chocolate will cause the strawberries to mascerate, or juice up. And then you will have leaking strawberries all over the place.

Looking through a few sites which sell them, they all indicate that they are shipped overnight.

The only thing I can suggest is storing them in a cool, dark basement.
