6Qt Kitchen Aid And Sugarshack Icing

I just got my 6qt Professional Kitchen Aid. I upped Sugarshacks recipe to adjust to the 6qt. 6 cups hi-ratio shortening, 6 lbs ps, 18 tab coffee creamer and 5 tab flavoring.
It came up to the top of the bowl, but I couldn't get it to fill out to the sides of the bowl. It kept getting those air pockets along the sides of the bowl. Of course my icing had all kinds of air when it got done.
What did I do wrong, I really want it to work with the new mixer (my husband bought it for me just to make this icing).
I'll still use the icing air or not. I love everything else about it, just not the air.
i watched sugarshack make their icing on a youtube video and she tells you the amount of each ingredient while she makes it and what speeds to use when while using the kitchenaid. if you want the link let me know but from what i remember she used 5 1/2 cups shortening 3lbs ps, 12tbsp coffee creamer liquid and 4 tbsp flavoring. hope this helps
I can make it perfect in my 4.5qt mixer. I just can't seem to get the icing to fill the bowl from side to side in my 6qt. The bowl on my 6qt seems so wide that the icing keeps pulling away from the sides.
If you pull up some of her replies, you will find Sharon's recipe for the 6qt. It's actually 6.5 lbs of powd. sugar, 3 lb hi-ratio shortening, 11 Tablespoons of coffee creamer and 4 (or 5?) T of flavoring.
I do a ratio of shortening/butter, but it equals 3 lbs and works great. Another Sugarshack convert! Good luck.

I have a 6 quart KA and lowered the speed of mixing and make a smaller batch at a time than her recipe. I found it reduced the air bubbles and I don't need that much icing at one time.
This is what I use:
2 cups Sweetex
2 Tbsp wedding bouquet
7 Tbsp coffee creamer liquid
2 lbs powdered sugar
I just double everything if I am doing a larger cake or small 2-tiered.
3 lbs sweetex (usse a kitchen scale)
6.5 lbs powdered sugar (use a 4 cup measuing cup, 4 cups=1 lb)
9 tbsp wedding bouquet
11 tbsp hot coffe mate liquid
cream sweetex and liquids on first speed very well. add half amount of powdered sugar, let mix 30 seconds, then add rest of powdered sugar. scrape sides of bowl very well turn speed up one notch, mix for 9 minutes. scrape sides of bowl around top, mix for 1 minute longer. (Do not turn off mixer durning this scraping!) now, turn off mixer, remove paddle and cover with plastic wrap. let sit for 1 hour or longer.

I would love to try your recipe but was wondering if any substitutions could be made. I have been unable to locate high-ratio shortening where I live and am not sure where to get wedding bouquet from. Thanks and have a great one!

Sharon - I had to make 4 batches, so the icing I made last night I just filled my bowl to the top and whipped the air out of it. Turned out great I'll make sure to write the conversion down this time.
I am glad I saw this, I am defintely a convert myself with your icing and am so glad you were willing to share it with us.... I too have a 6qt and was messing up my icing trying to adjust it.... so thanks for posting... you are awesome!!!!!!

xstitcher-I also live in an area where I can't buy Hi-ratio shortening. I ordered my from Global Sugar Art. Shipping took a little over a week, but I ordered some other stuff that was large so that may be why it took so long. I'd also be interested where to get the wedding bouquet flavoring.

Thx for letting me know! I'll see how much it is with shipping to Canada and order it if it isn't to high! I'm just wondering at point it wouldn't be worth ordering though, is the hi-ratio shortening that much better than regular shortening?
I've never tried it or tasted it myself, so I'd love to hear some feedback on it! What I've read on some of the other links is that it is not as greasy, other than that does it alter the taste at all?

The wedding bouquet emulsion is incrediblely good! We got to taste icing with it in at the Mid-Atlantic cake show at Sharon's Booth, but they had sold out of it. I just pm'd her to see if it can be bought through her site.
My friend told me that high ratio shortening is "nothing more than lard" - is this right?

Hands down the best icing I have ever made ... easiest to make.. always (OMG I'm jinxing myself) comes out perfect!!!
Can this be made with crisco? And is it good tasting - it seems like an unholy amount of crisco so it scared me, lol! But all pics in SS gallery are smooth and awesome - just wondered if it tasted greasy or anything? Thanks

I hope one of you that uses SugarShack's recipe sees this within the next few minutes....I want to make her recipe today for the first time in my 6qt....but I do not have a scale...so needless to say I need to know how may cups of shortening are in the 3lbs of Sweetex in the recipe??? I will be measuring it out in cups instead of the weight???? Help!!!!!!!!!

When I took my Wilton courses last fall, everyone thought that shortening was made from animal lard. Our instructor had to go into what shortening is made from.
I know I asked this already.........But where can I buy wedding bouquet flavoring from???? I googled and msned but can't find it. Please help!
