I am making a carved lobster next month. This is my first carved cake. I've read that pound cake is the way to go- however the customer wants a super chocolatey cake- any good recipes for a carveable chocolate cake? And any tips on carving the lobster? I have a month and no other cakes right now so I have plenty of time to practice. I'm assuming the little details can be molded into the fondant?
Also... I really wanted the lobster to be riding a surfboard- but am not sure how to execute the surfboard. I looked all over for a real novelty-sized one but couldn't find one anywhere. Then I thought about carving styrofoam and covering it in fondant. I'm just not sure how to get it to balance properly, I'd love to have the little fin on the bottom. Any ideas?

I like to use the Cream Cheese Mint Chocolate pound cake recipe from Chocolate From the Cake Mix Doctor. You can substitute the same amount *by weight* of melted dark chocolate for the Andes mints the recipe calls for. Moist, carve-able, and delicious!
