Did I hear you can leave out a cake that has creamcheese frosting because of all the powdered sugar in it? I really don't want to go rearange my refridgerator to make it fit. icon_rolleyes.gif

You are absolutely right about the cream cheese frosting. My 'mentor,' who was in the cake biz for 45 years, told me that there is something about the powdered sugar that stabilizes the cream cheese and makes it okay to leave unrefrigerated. What I DON'T know is what about peanut butter frosting and other fillings/frostings which contain dairy ingredients. Maybe another pro can help with that?!

I had a 5 tier wedding cake recently that had cream cheese filling. It would not all fit in the fridge so I had to leave it out. I made sure it had enough powdered sugar that after I left it sittinf for about 30 minutes it had began to crust. It didnt crust hard like my buttercream, but it had crusted.

No one got sick and they loved it.

I just did a cream cheese icing and left it out with no problems.

So sorry to barge in on your discussion, Cocobean.

I have to do a cream cheese icing w/vanilla custard. Could i leave that out too or refridgerate because of the custard.
