Mudcake is a very moist, dense cake. I mostly do a dark chocolate mudcake and occasionally a white chocolate mudcake, but i've had an order for caramel so I'm testing recipes. This isn't a cake that needs filling as its so heavy the filling would squash out! I just put the batter into cupcake patty tins and out came cupcakes!!

here's the caramel mudcake recipe I was making....

250g butter
200g white chocolate
1 1/4 C brown sugar
1/2 C golden syrup

place in a saucepan over low heat, stir until the choc is melted and the sugar dissolved. transfer to a large bowl and cool.

3 eggs- lightly beaten
1tsp vanilla essence

add and beat into choc mixture

2 C plain flour
2/3 c self raising flour
300ml sour cream

sift in flours, add cream and beat with electric beaters until smooth

Makes a 8" square or about 24 cupcakes

bake at 160 C

enjoy !!!

Okay this cupcake bussiness is really a science. My cupcakes always come out looking bumpy and all funky around the bottom. I can't get them to keep a nice clean shape. Could it be the type of liners or pan I'm using?

Currently on page 115 on this thread. I am determined to read every page. Crazy I know. But anyway icon_lol.gif Someone way back (I'm sorry if I don't remember your name or if it has been answered) asked if anyone had tried any recipes from the Hello Cupcake book.

I tried their banana one (from scratch recipe) and paired it up with their marshmallow recipe. It got great reviews from my friends and family. It tasted like banana bread and the icing had a light taste to it and it wasn't too sweet.

If its allowed I will post them if anyone is interested.

Not sure. Can you walk us through your process and maybe we can figure it out? Liners shouldn't matter. Are you using a regular muffin pan?

Ive had that happen a couple of times if they are in to long, sometimes Ive learned that just because a recipe says 18 minutes, doesnt always need 18 minutes, Ive cut some down to 15 or 16 minutes & they are perfect. Like GrandmaG says though, it's hard to know for sure without knowing what your doing step wise icon_smile.gif

I finally found the malt syrup in Weis! (I know this was an old conversation in the beginning of the posts but I was excited icon_lol.gif ) Now if I can only find an equivalent to the bettercreme I hear so much about up here in New Jersey. Okay, sorry if this has already been asked, but there are 751 pages, and I'm just not sure I'll ever be able to catch up icon_smile.gif Now, this also may be a total DUH question, but I have to ask it. I make cakes, and have done cupcakes as a kid. When I've done the cupcakes I've baked them straight in the liners with foil wrappers (I bought them that way) and just line them up on a cookie sheet, but they always bake in odd shapes--like oblong, but since we were just baking them for family it really didn't matter......so to bake a perfectly round cupcake, are you suppose to take a liner (with or without foil) and put it in like a muffin pan? That's what I'm assuming, but I just wanted to ask the cuppie experts out there, and make sure it isn't my recipe. I am trying to get into the mini cake/cupcake work also icon_smile.gif Thank yoU!!!

I didn't get any Velvetop but I got 2 cases of Bettercreme so that will last me for awhile!
Most times you can use cake recipes for cupcakes. The WASC doesn't always work as well if you want domed cupcakes but I use it all the time and actually prefer the flat cupcakes to decorate.
I think the reason you see cupcake recipes is they are probably scaled down cake recipes so you don't make a gazillion cupcakes. icon_smile.gif I think I've had a harder time taking a cupcake recipe and making it into a regular cake. I've had to scale the recipe amounts up quite a bit to get a big enough batch to make the cake I wanted.

As much as I hate to report, I am really unhappy with Acupcakery's business. I have always bragged about their cupcake liners although it does take at least 2 weeks or more to receive them since they are in Canada. I ordered $20.00 worth of liners that were advertised as 2 1/4" on bottom and they came as 1 1/4" on the bottom. They are more of a large mini. I E-mailed them to let them know of their mistake since you can't phone them and and after 5 days I have had no response. I could dispute my charge since I bought through Paypal but I think I will just not buy from them. I'll stick with Confectionery House!

If you don't have a pan that will fit them, or a need for the teal (they are the teal ones right?), I'd dispute it.
