I'm going to be making my Irish Car bomb cupcakes for St. Pat. Guinness Chocolate cake with Bailey's BC...so friggin yummy!

There is a drink by that name, a pint of Guinness and a shot of Bailey's. There is usually some Jameson in the drink as well, but I haven't included that into the cake yet. Here is the recipe for the cake, I then just add about 1/2 c of Bailey's to my SMBC for the icing. Made these for my Aunt's wedding and everyone loved them!

No problem! Be warned, the recipe makes about 5 dozen cupcakes and I haven't had any luck cutting it in half, but they do freeze wonderfully!

Those sound great stsapph! I bet you could make a doctored version and use the stout for the liquid. Not so many cupcakes that way. I've been making a lot of cupcakes with different alcohol and they come out so nicely textured. Mostly vanilla vodka. Cake Love uses alcohol a lot in his cake recipes.
I just found a recipe that uses Irish Whiskey. Sounds good.

Hi my cuppie ladies. How is everybody doing ? I'm doing good just have been spending a lot of time with my niece since her mom had surgery. She is back at work now so everyone is getting back to thier routines. I love doing it though and it has gotten us even closer. Fiddle I love the idea with the andes mint on top of the cuppy. Sounds delicious.
I used to skinny dip but now I chunky dunk!!!

I am doing great, work is not as hectic and my health problems turned out to not be as bad as first thought, lets just say, surgery is now not needed.

Fiddlesticks thanks for the comments on my idea. The shamrock on the top will be a cream cheese mint but I love the idea of the choc Andes mint. Do you think I could drop one in each of the cupcakes before they bake and have it melt inside the cupcake? Or even some kind of small peppermint patty inside of the cupcake? Then grate choc mints on top of the icing or is that just too much mint?
