what are the increments of fruit filling to bettercreme....would you whip a cup or two cups and how much fruit filling...don't want to make it too soft. thanks.

Yes, a white mix of your choice. I've been using DH with adding a pack of instant pudding. I think I added white chocolate to my strawberry cuppies but you can add which flavor you want. I was the same as you. I would like to try out more strawberry scratches but I had to make them for someone else too and I didn't have time to experiment. She said they were snapped up quick at her party so I guess they liked them! If you didn't want to use a whole cup of strawberries you can make up the rest with buttermilk. I kind of use the Enhance recipe here on CC and do some substitutions.

Im sorry I cant answer that. I havent measured at all. I just add till it looks right ! I bake the same way check it touch i,t tell if its done ! The pudding mixture is 2cups of bettercream ( unwhipped )I think, do maybe start there and add what amount of fruit looks right ?It will also depend how much fruit you want ( like more fruity and less of a mousse type ! My last cake I iced the top of the layer made the dam, spread my thick layer of fruit on the top( inside the dam) and then added the 2nd layer of cake. It was very fruity and creamy both !

I thought that peach cake sounded really good too on the Home Page. I assume OO means olive oil. You can substitute canola oil. Some people just prefer olive oil in their cakes.

if you type cake doctor strawberry cake as your search word on google or whatever you use...it comes up with a strawberry cake starting with a cake mix. I have tried many of her cakes and they are great.

There are many 5 star fruit fillings in the recipes here on CC. Just go to the fillings category! There is an apricot one that sounds really good!

i've got a question about storing my cupcakes...I made the cupcakes for my friend's meeting tomorrow. I am getting them to her tonight and her meeting is 4pm tomorrow. They are vanilla cupcakes with vanilla buttercream and strawberry filling (from a sleeve).

Would it be best to give them to her in a cardboard cake box (I've got some of the plastic cupcake inserts) or since she won't be serving them until later tomorrow, should I just lend her my Wilton cupcake carrier?

I was thinking the carrier would keep them from drying out better than the box - but maybe since they're filled I don't need to worry about them drying out.

What do you think???

I made heaven in the form of a cupcake today...lol.

Burnt Butter Latte Cuppies

1 DH Classic White Cake Mix
1 1/3 Cup Espresso infused Whole Milk (recipe follows)
3 Eggs
1/2 Cup sugar
2 Tbsp Vanilla Burnt Butter (recipe follows)

Espresseo Infused Milk: Place 1 1/3 Cup Whole Milk in sauce pan. Add 3 Tbsp espresso beans. Bring to a boil, stiring constantly. Once at the boiling point, remove from heat, cover, and steep for 30 min. Once steeped, add 1 Tbsp freshly ground espresso powder to milk, place back on heat, bring just to boil and then pour through fine meshed sieve to strain.

Vanilla Burnt Butter: place 4 Tbsp butter in small sauce pan. Melt over med heat, until frothy and stir vigorusly. let the butter cook until it is a nice amber color and has a nutty scent, and has foamed up once or twice. Once you see the nice brown flecks in the butter remove from heat and add 1 Tsp pure vanilla extract. BE CAREFUL, this will boil up fast... stir the vanilla into the butter, return to heat for a few seconds and then remove from heat again.

Add Espresso infused milk, Vanilla butter, 3 eggs and 1/2 cup of sugar to cake mix. Mix until incorporated on low for 30 seconds then on med speed for 2 min. Pour into cupcake papers and cook for 20 min at 325 degrees. Remove to wire rack and cool.

These are great topped with a mocha frosting or a sweet cream frosting.

Once I have photo's I will post the end result (if they last long enough for a photo shoot!)

Today was the worst day ever!

I received this article in my Culinate newsletter today. I wonder if the baking powder is affecting the flavor. I have noticed that taste in my corn muffins and thought it was the powder. Guess I will buy Rumsford from now on (or make my own- per the article).

Zoomzone, that is such a good article. I learned a lot from it. I just made an eggless vanilla cake recipe that does not have baking powder but has 2 tsp. of soda and it has the soda taste to it too so I need to work on something different. I like everything else about it. I don't know why the Golden Vegan Vanilla recipe has baking powder & soda.

GrandmaG - I truly believe that you can omit the soda and use only powder. I made my banana bread the other day and took out the eggs using only the soad and added vinegar at the end of mixing put it immediately into the oven and had perfect results, it rose nicely and you wouldn't have ever noticed that it didn't have eggs unless I told you.

zoomzone - That article was a great read, thanks for sharing it.

Chassidyg - I am so sorry that your family and theirs has to go through this. I hope for better days for all of you.

Penny - I know I'm a bit late, but I think the cake box is sufficient and easier for your friend, she won't have to carry it to & from work and then have to wash it for you (not that she would HAVE to but she most likely would).

Does anyone have a good chocolate bc recipe? Or a good swirling chocolate recipe? The last one I tried came out awful icon_sad.gif. It was out of the wilton book.

Thanks, Cupcakemkr - it was POURING last night when I left to meet her. I didn't think cardboard would be the best idea. I loaded everything into my car - cupcakes in the carriers as well as the box. By the time we met it had stopped - but it was supposed to be raining on and off all night! So, I just gave her everything the way it was and told her she could use the box since it would be easier to carry if it wasn't raining tomorrow (which is now today!).

I hope they work out for her!

chassidyg.. I always use... My easy choc buttercream frosting.. Its here in the recipe section ! In my area people love it, so I quit looking and thats all I use now !

Thank you for all the thoughts and prayers for Andy & his family. I admire his wife so much more after yesterday, she's such an amazing woman, and such a strong woman.

We wives were okay up until the final call & the flyover, then we lost it. I told one of the ladies that it's not okay today, nor tommorrow, but in time it'll get better & Andy's watching over all of our husbands. I cant think of anyone better to have watch over my husband while he's out. I've saved all the funeral pics from the website, and there is 1 in particular I'm going to print and laminate, so he can keep it in his car.

Chassidy- I use the choc recipe on the back of the Ghiradelli cocoa powder can. It's the only choc one I use since it's so well received!

all right Fiddlesticks, I just looked through entire recipe file and couldn't find your Choc Butter Cream. Help please! I'd really like to try a different recipe, don't like mine, too rich maybe. I want one like the DH milk chocolate canned frosting - but from scratch. Creamy chocolatey not semi-sweet chocolatey. Like I really know what I'm talking about. I think mine is more bitter than I like, if I were going to eat choc.

I just uploaded new pics, but they wont show up for a bit, I was up till 1am making & icing cupcakes. I made probably 200! I think I was so physically drained and worn that I couldnt sleep, so I started making cupcakes, then more, then more, and then I sent them to work with my mom.

LinLiv - Thanks for sharing, I've tried a cocoa based bc but it is bitter.
I think I will try melting milk chocolate chocolate chips and use those instead of a semi-sweet kind.

I have an unfrosted cake sitting on my counter right onw so I may do this tonight!
