Valli - That's what she said she thought it was. But she didn't have the exact cost at that moment. I am sure that I'll be paying too much...but I am excited to try it so I am willing to splurge.

When I asked I was surprised she said yes! She was such a sweet person. Maybe they are willing since there isn't a Sam's Club real close here.

Good luck!

I know my wal mart here doesn't sell you anything from the bakery. ugh. Not even cake boards or boxes. Some times I'm in a pinch and I go to my local bakery and buy a box or so from them. I never asked if they would sell me any icing or what they have.

That's about right for Sam's price on the Bettercreme whipped. If any of you have a Sysco's call them and you can buy from them!

That's a good idea with the buttermilk, butter flavor and maple for the pancake cupcakes! I also wondered about maybe substituting some of the flour with pancake mix or bisquick. This is a very thrilling idea you've struck upon here... I am totally wanting to figure it out!! Of course, for me, instead of a sweet filling, I'd want sausage in the middle! icon_wink.gif Is there a better taste than pancakes and sausage together?? (Maple icing though... gotta have that maple!)

icon_biggrin.gif Mel - I always roll my sausage in my pancake! LOVE IT icon_lol.gif

Good idea with the bisquick or other pancake mix, would you just add like 3.5 oz (similar to pudding pkg.) and a bit more milk & 1 more egg to a yellow mix?

I was also going to use the creme bouquet and orange flavoring. But both cake shops near me don't carry creme bouquet. So guess its oranges and lemons.

Grandma- Thanks! I use a mix extender with betty crockers devils food. My mom always used the recipe for a cake she makes, but now I use it for every choc. cake I do!

Penny- for the 4th, we are having a party!!! We bought a house about 6 months ago with a pool and a huge back yard. Its a fixer-upper, so we have been busting out butts to get it done in time for everyone to come. Its nice to have a deadline though... makes us work harder!!

Well, I'm back to laying flooring! Thanks for all the wonderful comments!

Oh-- I forgot to ask.... last week I was asking about a cookie cake. What I am going to end up doing is make a 9 in round cake and an 8 inch cookie for the top. Then I'll pipe around the cookie of course, and decorate. My question now is how do I bake a large cookie? I want to bake it larger, than cut it down to size. But, do I put a ball of dough on a cookie sheet or press the dough out to size and then bake?

Sorry this isnt a cupcake question, but I trust yall more than anyone else! (Is that bad?)

Ya, I had to order it. A few pages back someone gave a recipe for Creme Bouquet. You might want to do a search. It was something like butter, almond, vanilla and lemon mixed together.

Haven't made these but they sound good for the orange lovers out there!

Orange Pancake Cupcakes (adapted from The Cupcake Calender)
Makes 12

2 medium blood oranges, peeled and roughly chopped (save the peel)
1/2 c butter
1 c superfine sugar
2 eggs
1/c semolina flour
1/2 c oat flour
1/2 c all-purpose flour
3/4 tsp baking powder
1/4 tsp salt

Syrup:
peel of 1 orange (from above)
1/2 c superfine sugar
1 c water

1. Preheat oven to 325. Place cupcake papers in tin.
2. In saucepan, cover the oranges with water. Simmer 15 minutes. Cool, drain, and puree in food processor.
3. Meanwhile, beat together butter and sugar until fluffy. Slowly beat in the eggs. Stir in the rest of the ingredients, along with the orange puree. Spoon into cups. Bake 35 minutes.
4. While cupcakes are baking, make the syrup. Remove the pith from the orange rind and roughly chop. Bring sugar and water to a simmer and add the orange rind. Boil uncovered for 5 minutes. While cupcakes are still warm, spoon the liquid over the cupcakes.
5. Can be stored in an airtight container for a few days.

I think I'll try to come up with something this weekend. Maybe if I bake the cupcakes only half-way then soften some ice cream, spoon it ontop of the cupcakes, then let them freeze in the liners in the pan.

Then top with ???? That part I haven't figured out yet!

I baked a vanilla cake in a sheet pan, and let it cool completely. WHen it was cool, I cut circles of cake out with my ring cutters.

I then lined my cupcake pans with papers, and added a piece of cake, put in a scoop of ice cream, and then another piece of cake on top. I freezed them overnight, and then the next day, I topped them with whipped bettercream.

Very quick and easy.

This recipe is from "Hershey's Easy Baking" cookbook. My DD who is 10 loves to make these and they are really good--they stay soft and chewy without being gooey. When you put them in the pan, the dough doesn't go all the way to the edge, but spreads just the right amount as it bakes. It makes two nine inch cookies, probably between 1/4 and 3/8 inches thick.

Milk Chocolate Chip Giant Cookies

6 tablespoons softened butter
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/2 teaspoon vanilla extract
1 egg
1 cup all purpose flour
1/2 teaspoon baking soda
2 cups (11 1/2-ounce package) Hershey's Milk Chocolate Chips ( although we like it better with 1 cup chips and 1 cup chopped nuts )

Heat oven to 350. Line two 9-inch round baking pans with foil, extending foil over edges of pans.

Beat butter, sugars and vanilla until fluffy. Add egg; beat well. Stir together flour and baking soda; gradually add to butter mixture, beating until well blended. Stir in chips. Spread one half of batter into each pan.

Bake 18-22 minutes or until lightly browned. Cool completely; carefully lift cookies from pans and remove foil. Frost if desired.

Hope this helps!! icon_smile.gif

cake mix doctor has a condensed tomato soup or something it is called cake in it. Maybe you can get some ideas from that and turn that into cupcakes. Should be interesting.

I'm also a huge fan of veg soup, but it's a little warm for that. That tomato soup cake is good though! I love that book! Lots of fun ideas!

DaisyLisa... when I make giant cookies here is how I do it:

Traditional Tollhouse recipe (sorry, you just can't beat it... it's a classic for a reason!!)

I use one of those pizza pans that have the holes in the bottom, line with parchment cut in a circle, quick spritz of Pam, press the dough into the pan leaving about an inch around the outside for it to spread. Press the dough about a half inch deep. After baking and cooling it, I use a cake board to trim the edges. Simply lay the board on top of the cookie, cut around it with a paring knife. EAT THOSE EDGES!! They are SO good! My hubby begs for those 'scraps'.

toleshed...... I saw cocobean's reply to the Creme Bouquet question a short while ago. She said she had seen it as:

1 T. lemon juice
1 t. clear vanilla
1 t. almond extract
1 t. butter flavoring

However, cocobean made hers with:
1 T. lemon extract
1 t. pure vanilla extract
1 t. almond extract
1 t. butter flavoring

I've not tried it myself yet but plan to before long. I apologize to anyone else who posted the Creme Bouquet "recipe" as I want to give credit to everyone when possible... I just don't know the OP before cocobean.
