Nope, I've been bad... icon_razz.gificon_biggrin.gif I try to keep up but it's just too difficult with all the other stuff I have going on compounded by the fact that I only occasionally get the email notices and when I check back, 17 pages have gone by already! icon_confused.gif But I do try to keep abreast of the comings and goings at least to some degree. icon_lol.gif

I know it is!! There's a lot of great info in this thread. I'm just wondering if we can't break it up a bit into a forum instead because not everyone has the time to read through (currently) 305 pages... Something to think about anyway...

can someone tell me how sweet the HI HAT cupcakes are? I see the frosting is a meringue and then you dip in warm ganache or melted chocolate.....how do you eat it and how long does it hold up without topling? I love the look but am afraid to make them.

You guys are wonderful. thanks for your super quick response. I've never done high hats, but have an order I'd like to use them on.

I thought about doing the jumbo size, but with high hats, can you see that. lol, so I'll just try the regular size for now.

I made the hi-hats back in February for the first time.
They are VERY SWEET! Almost too sweet...but still yummy.
I had no problems with them toppling over. I just refrigerated them in-between putting on the meringue and dipping in chocolate. They held up just fine!

thanks Penny...they look gushingly sweet and not something that would hold up for the office hogs. Still love the look but would prefer ice cream under the chocolate coating, like you get at the local dairy whip.

I just looked through the whole recipe file and I didnt see any recipe for.. cinnamon toast crunch cuppies? I think maybe it was on one of the many links that were added ? There was that one for 800 cuppy recipes plus many more ! Maybe when whoever makes them they will share the recipe and let us know if they are worth trying ?

Sorry folks. Thought I got the recipe from this thread but it's from Recipezaar:

Cinnamon Toast Cupcakes
www.recipezaar.com

Yields: 20 â 24 cupcakes

1 yellow cake mix
1 (3 1/3 ounce) package vanilla instant pudding mix
1 1/4 cups whole milk
3/4 cup vegetable oil
3 large egg
1 tablespoon ground cinnamon
cooking spray

Place baking rack in center of oven and preheat to 350ºF.

Line cupcake pans with liners and spray top of pan with cooking spray.

Place cake mix, pudding mix, milk, oil, eggs and cinnamon in a large mixing bowl.

Blend with mixer on low for 30 seconds. Scrape down sides of bowl and increase to medium for 1-1/2 to 2 minutes.

Spoon 1/3 cup of batter into each liner (about 3/4 full). Place pan(s) in oven on middle rack.

Bake cupcakes till they are golden brown, (about 18 to 22 minutes). Cool on wire racks for 5 minutes.

Slowly and carefully turn pan on it's side and remove cupcakes.

Cool 15 minutes and frost with Cinnamon Cream Cheese Frosting. Ice cupcakes and sprinkle tops with cinnamon sugar.

NOTE can also be made in 9x13 pan if you wish

OK... I used Indydebi's frosting as DS & DDIL don't have enough room in the frig for something like cream cheese frosting.

These are dirt easy to make & make the entire house smell DIVINE! Would love to hear any modifications that come to mind. ENJOY!

Forgot to add that I added the word "Crunch" to the recipe thinking I'd toss in some toffee pieces or chopped up butterscotch pieces. However my DIL & grandkids are rather linear not wanting such things in their cakes/cuppies. Anyway, despite my never having tried the toffee bits, the "Crunch" stayed when the family talks about these cuppies. Some day I'll make them with the toffee pieces, frost with chocolate frosting & take to our dr. office here in town! icon_biggrin.gif

I have used toffee bits in a candy bar. The recipe is in cake mix doctor. I put toffee bits instead of candy pieces, and they don't melt completely. Compared to that, cuppys are not baked that long, so it should hold up pretty good I think.
