Frazzled About Servings

This Sunday I am doing two cakes that I thought would serve 110. An 11 inch, two or three layers, and a 12 by 18 two layer. Im making the sheet pan into a shirt and will add a little more cake to it to be the collar and the shoulders. The people were just here and she was concerned the pieces would be too small. Im so stressed about figuring servings. I know that the Wilton chart should be enough, but people have their own ideas about how large the pieces will be, I dont want to disappoint. Any advice? I've gotten myself so frazzled over this, I question why I do this at all.

It sounds to me like you're going to have enough cake for 150. I always provide a cutting chart to the customer with my cakes so they know exactly how to cut it to get the proper amount of servings. Here are a couple of serving charts...the first one addresses sheet cakes (1 layer and 2 layer) and the second one deals with your 11" pan.

So if you are going by those, your sheet cake serves 108 and your 11" (2-layer) serves 35. If you add another layer it will serve 50.

Your customer may need her ideas of "serving" readjusted. These are not great big party-sized triangles of cakes like we had at birthday parties when we were little! If she wants more cake, she needs to pay for more cake.

Kelleym~ Thanks for your info. I can't remember where I saw it here on CC, but I really think it is a wise idea to have the actual template sizes of cake servings to show customers, so if they want bigger pieces than what they see, they can order more cake. Anyhow, I agree and thank you.
